This clean eatin’ gluten-free white chicken enchilada casserole is made with non-GMO corn tortillas, goat’s milk pepper jack cheese, goat’s milk yogurt and Hatch green chiles!  Super simple and delicious. Gluten-Free White Chicken Enchilada Casserole I love white chicken enchiladas!  It would be kinda weird if you didn’t.  Just sayin’ … That combo of the cheese and chicken smothered in a rich sour cream and green chile sauce.  Definitely a comfort food favorite.   I miss it.  So since discovering all the ways goat’s milk has brought joy back into my life, I turned ..read more

Smoked Goat Gouda Broccoli Cheese Rice
The Weekly Menu
by Deana Larkin Evans

Goat Cheese Broccoli Rice This version of broccoli cheese rice is made with smoked gouda goat cheese, jasmine rice, and coconut milk.  It’s perfect for those of us trying to avoid the casein found in cow’s milk.   Plus who doesn’t love goat cheese?  Or creamy cheesy broccoli rice dishes. Recently, at my favorite store the goat cheese section expanded.  We found a goat cheese smoked gouda (smoked gouda is one of my very favorites) from Holland and several different types of hard and soft cheese.  Machego. Chèvre… It made me so happy to be able to make this again.   ..read more

Awesome Crab Stuffed Jalapeño Poppers
The Weekly Menu
by Deana Larkin Evans

These awesome gluten-free jalapeño poppers are stuffed with goat milk cream cheese, Alaskan King crab, and fresh chives then topped with a crushed cereal and goat butter mixture. I don’t eat seafood often, but every now and then I get a craving for lobster or Alaskan King crab. Especially, when Brett orders crab rangoons when we pick up Chinese take-out. But they aren’t gluten-free. So I was thinking about trying to do a gluten-free copy cat, but I really just like the stuffing more than the wonton wrappers. And I wanted to keep it very simple. So after a little thinking about it, I thought i ..read more

Homemade Cilantro Jalapeño Hummus
The Weekly Menu
by Deana Larkin Evans

Homemade Cilantro Jalapeño Hummus I love me some hummus! And I really like it flavorful and spicy. We’ve been buying a new flavor from the store – Cilantro Jalapeño Hummus – and because I usually devour it in two days it was starting to get a little expensive.   So it was time to try to make it at home.   I like to add white beans to the hummus to make it a little creamier plus white beans are high in calcium. And I’m always looking for ways to naturally increase my calcium intake since I can’t eat a lot of dairy.  So I’ve been testing a few different batches using a basic ..read more

Gluten-Free Dairy-Free Faux Queso
The Weekly Menu
by Deana Larkin Evans

What is a faux queso? Sometimes when you love to eat and cook, something magical can happen in the kitchen. Impromptu and divine. While Brett and I were making King Ranch Chicken Casserole and waiting for it to bake, we snacked on the extra corn tortilla scraps and used them to wipe up some of the leftover sauce in the Dutch oven. And he said “this totally tastes like queso!”  And it actually did! His love of comfort food and ideas have propelled many of our efforts in the kitchen to recreate our favorite comfort foods while we deal with my dietary restrictions. So I cut back the recipe a ..read more

Summer time = Big Ol’ Salad time! And grilling season! So why not indulge in a steak salad loaded with veggies and a perfectly grilled steak and a delicious homemade southwestern dressing! The nice thing is you can add whatever veggies you like or want to throw on the grill. We usually grill mushrooms and red bell peppers and now corn is in season so go ahead and grill some of that too.   We love salads around here.  Such a great way to get lots of protein and dietary fiber in one meal.  My faves are Salad Nicosia and Greek Salad.  Buffalo Chicken Salad rocks and so does t ..read more

Apple Cider-Brined Pork Tenderloin
The Weekly Menu

Cider-Brined Pork Tenderloin I’m not gonna lie, this apple cider-brined pork tenderloin with roasted apples and carrots is ridiculously delicious!  It is truly the best pork tenderloin I’ve ever had.   We all know how well apples go with pork chops, but brining this tenderloin in apple cider takes it to another level.  And leftovers are amazing the next day. Yum! And tossing the apples and carrots in lemon juice before roasting them makes for a tangy and sweet side that goes so nicely with the pork.  And you can serve with mesquite asparagus or these fancy green beans ..read more

Gluten-Free Cherry Nectarine Crumble
The Weekly Menu

Gluten-Free Cherry Nectarine Crumble I LOVE summer fruit. Especially, stone fruits like cherries, nectarines, peaches, apricots, and plums. The abundance of summer fruit is awesome. But sometimes I can’t eat it all before it starts to really ripen. But that has actually turned into the best part. Because that is when it is perfect for making a fruit crumble or healthy sorghum millet muffins. I’ve tried many combos and some of my favorites have been mixing strawberries with granny smith apples, or peaches and cherries, and apricots go really well with raspberries (in the muffins). The nectari ..read more

Summer Salad with Peach Balsamic Vinegar
The Weekly Menu
by Deana Larkin Evans

Summer Salads One of my favorite gifts from my in-laws back in the day, was alot of the most delicious balsamic vinegars and olive oils from Con’ Olio! We made a ton of really great salads when I was into eating alot of kale salads! And lately, I’ve been on the hunt for some really good vinegars again, because all we feel like eating right now are salads. Not necessarily kale, just salads. And these are some really fun balsamic vinegars because they go so well with fruit in the salad. Summer appetites, you know? Like two to three times a week. And supporting local businesses. So we’ve been or ..read more

Gluten-Free Cobbler with Fruit Filling
The Weekly Menu
by Deana Larkin Evans

I love summer fruit cobbler and yummy treats. I posted an awesome recipe for gluten-free cobbler made with Texas peaches (it’s also dairy-free). But I never get tired of experimenting with a recipe, especially if it is as yummy as this gluten-free cobbler. And when I ordered the Salt Lick Cookbook, I found their recipe for cobbler! Well I just had to convert to gluten-free and try it. And it was wonderful. This time instead of using fresh fruit, we used Lucky Leaf fruit filling. So much easier and delicious than prepping all the fruit from scratch. Okay let’s get started. Fruit Filling for t ..read more
