Life is busy, but full of only fun things. Something I’ve struggled with the past year. Something I complain about, but feel silly when I do. As someone who thrives and absolutely recharges by having down time, this stage of life has exhausted me a bit. Weddings, parties, happy hours, etc. All things I absolutely love doing, but still… I’m not sure there is a fix, besides doing my best to carve out more ‘me’ time. I’m ranting and don’t really know the point of all this besides to say, life is busy, but life is fun. A double edge sword, that I think I’m okay with… -i’m officially a paraphernal ..read more

A full week of fun friend time, a weekend with family, capped with a Sunday night spent with more bffs has me ~feeling the love~ for Valentine’s Day. You can bet I’m in a pink sweater at work today, Rom Com Valentine is on in my airpods, and Defined Dish healthy Chinese food is on the menu tonight. I’m happy to report February is trumping those dreadful January blues. Proof in the pud here. -First time making tofu for myself. The recipe was on point, but I didn’t use extra firm tofu and that was my first mistake. -Another successful galentine’s in the books. PJ-themed and not without heart-sh ..read more

Letting the pictures do the talking today. Keep scrolling and reading. K thanks bye! -Have you ever made Sheet-Pan curry? Pretty genius. I used this recipe. -Cutie pre-valentine nails with a neon pink tip. -Drinks on a Monday, who is she? But when it’s with one of your best friends and you girl talk for an hour, it’s worth it. Highly rec the bar at DL Macks. -I bought ingredients for veggie tacos, but quickly realized they weren’t cutting it, so I added some cheese and turned my meal prep into black bean and mushroom quesadillas. -Woke up Thursday to snow and ice! I didn’t really believe the ..read more

My Rom Com Holiday playlist was such a hit (thank you to all who liked, downloaded and listened), it only seemed right to follow it up with a Rom Com Valentine playlist. Full of loveable songs and scores from my personal favorite romantic comedies. February 1st kicks off the lead-up to Valentine’s Day. So, I give you a 30 song playlist to set the mood. It’s Complicated, Because I Said So, One Fine Day, My Best Friend’s Wedding, How to Lose a Guy in 10 Days, and of course Valentine’s Day are just a few rom coms featured on the playlist. Just like my holiday playlist, I encourage you to list ..read more

Wait…it’s still January? No way. -I cooked from Camille Styles 5-day Plant-Based meal plan last week and loved the recipes. I only made it through 2-3 recipes, but I’m carrying them over and making a few more this week. Last week was the lentil salad with roasted vegetables and green smoothie, this week is the black bean tacos and sheet-pan curry. -New Colleen Hoover! Didn’t have much time for reading last week, but can’t wait to dive into it this week. -Gosh I just love friends. Friends are the best, especially these 4! -Is that you I see celery juice?? Welcome back old friend. -Friday lunch ..read more

Do you journal? I was talking with a couple friends about how I’m a journaler. Accidentally might I add. I never set out to or have really thought about how much I journal. What likely started as prayer journals and notes I took on middle school church trips, has turned into stacks of personal journals over the years. I write to God, I write to myself, I vent, I recap, I write about anything. In addition to my paper journals, these bites posts have become my digital journal entries. I absolutely love to go back and reach old bites posts and feel so thankful for these accidental years of journa ..read more

Entering a short week after a slow Monday for MLK service Day. After a slower week and enjoyable weekend I’m turning the corner with my thoughts of January. Less gloom, more enjoying the slowness. Here is to more slowness in 2022. Can i say slow one more time? Slow! -I’m back on my smoothie game in the new year, and recently hooked on Weeknight Bites Snickerdoodle Smoothie. -Crispy orange chicken a la Chef Pete for a fun Tuesday night din. -Working on adding in more relaxing and reading to my morning routine. I’m trying to wake up earlier to read a chapter or two from my Kindle, do my devotio ..read more

I somehow got lucky enough to have two friends cook delicious meals for Peter and I this week. Dinner is such an everyday thing, but to have someone cook for you is special. There were appetizers, drinks, delicious entrees and desserts at both. I was quickly inspired to set a new goal for 2022 to host more people this year. I’ve gotten away from having people over to my place, and I don’t love that. I think I started to feel like my apartment is too small, I don’t live in a house, or my kitchen isn’t big enough, etc. But I’ve had about 5 girls staying in my 800 square foot apartment over a wee ..read more

A double bite recap to sum up the last two weeks of the year. It was a really great holiday being together with my whole family. We haven’t had Claire and Mike with us in years on Claire’s birthday and Christmas, so that was a treat. We even had Mike’s parents with us all the way from Australia. The more was definitely merrier. Now it’s January, how did we get here?? I was struggling to say the least the past two days. The first of the month, first of the year, and first Monday after being gone for two weeks kind of crumbled on me to say the least. After a good therapeutic cry and shifting my ..read more

Christmas week is here! I went out with a bang last week with nights full of fun events capped off with the most beautiful wedding. I’m home for the holiday now and can’t wait to get through the work week and slide into Christmas family traditions. Decorating cookies, a viewing of Eloise at Christmastime, church service, breakfast crescents and Christmas salad are on the docket. Merry Christmas everyone! -Can’t even with this Christmas spread! Low twins outdid themselves with an over-the-top table and seriously fun White Elephant party. -Number 7 seeing REK! His Christmas show never disappoin ..read more
