Just because you’re gluten-free doesn’t mean you can’t have a flakey delicious homemade apple pie! The whole family will love this one gluten-free or not.
As far as the best gluten-free apple pie – so it’s the only gluten-free apple pie I’ve ever had, but I HAVE had plenty of apple pie in my time and this was amazing apple pie gluten-free or not! This recipe makes 2 crusts which you’ll need for the top and bottom. This was our first time trying lattice and it’s definitely harder with the gluten-free dough but we made it work and know that we can roll it a bit thinner next time!

It’s pumpkin season and I stocked up on my favorite gluten free pumpkin pancake mix from Trader Joe’s. I wondered if we could make something other than pancakes with them and came up with this super easy cookie recipe using the pancake mix! Since I made these yesterday and as I’m typing this all 24 are gone, I’d say it was a success (just ask my brother in law).
With just 5 ingredients this recipe is not only delicious it’s super easy too. Using the Trader Joe’s mix I got a great flavor and texture. Let me know if you try this with another pancake mix and how it turns out!

I have a feeling this Summer is going to be ALL about Star Wars with Star Wars Galaxy’s Edge opening at Disneyland May 31! I’m totally ok with that because it means the boys & I get to immerse ourselves into the world of Star Wars together! This cupcake recipe has been a birthday and/or Spring favorite around here for years. I got the recipe from a blogger who then took her blog down. People always want the recipe when we make these so it’s about time it goes back on the internet!
