Chocolate macadamia nut butter
Cupcakes and Couscous

Home made nut butter is one of the easiest things to make, you can play around with add ins and you have full control over what goes into it. Peanuts, almonds and hazelnuts are my nut butter go-to’s, but lately I’ve been playing around with macadamia nut butter and created a recipe that is next level delicious, I’m obsessed!     Macadamias are creamy and buttery making them the perfect candidate for home made nut butter. I roasted mine for a few minutes to intensify the flavour (don’t skip this step!) and blitzed them up with some cocoa and honey – so delicious! Macadamia nu ..read more

Double chocolate Easter buns
Cupcakes and Couscous

Easter is around the corner and I decided to give one of my favourite bread dough recipes a chocolate twist for the occasion. This brioche dough is enriched with milk, egg and butter making it extra delicious and soft. It’s really easy to work with and utterly divine to eat!   I’ve doubled the chocolate in this bun recipe, why not eh? There’s a layer of chocolate spread between the pastry layers, and the cooked buns are topped with a rich chocolate glaze. Be sure to spread this on while the buns are still warm.     I’ve included step by step photos below to make the ..read more

Plum squares
Cupcakes and Couscous

We are obsessed with stone fruit at the moment, especially plums. If only their season could be longer! We’ve been enjoying peaches, plums, mangoes and cherries in all sorts of recipes but mostly straight from the fridge – such an easy and delicious snack, especially when it’s hot outside. The end of season is fast approaching, and I wanted to get a quick plum recipe in before that happens.     Plum and almond are a flavour match made in heaven, and I’ve used them in this latest recipe. These plum squares are a spin on the spiced apple slices I posted a few years back, adap ..read more

Vegan sorghum salad

This is my favourite kind of summer lunch – a satisfying salad filled to the brim with fresh flavours. I chose to use sorghum grain for this tasty salad, and used tabbouleh inspired additions including tomatoes, cucumber and fresh herbs. The salad is tossed in an olive oil and lemon juice dressing, and it really is a treat for the taste buds.     I like to serve this salad with a pot of hummus, but it also works well with tzatziki, and in fact any type of dip. You can serve it as a side dish or enjoy it as meal on its own or alongside some bread. Simple and so delicious! So ..read more

Gingersnap crinkle cookies
Cupcakes and Couscous

What do you do when you find a jar of molasses at the back of the pantry? You grab your apron and whip up some ginger cookies! I love the depth of flavour that molasses adds to ginger flavoured bakes. I’ve also used muscovado sugar and crystallised ginger in this recipe and the resulting flavour is incredible.     These crunchy, chewy gingersnap cookies are coated in sugar (sorry January dieters!) which gives them a crinkly look once they’re baked. The small ginger pieces add an extra delicious pop of flavour. Ginger lovers, get the kettle on and be sure to try out this reci ..read more

Christmas biscuit truffles

Ever since I posted my no-bake Halloween biscuit truffles a few weeks ago I’ve been dying to try a Christmas version. I finally got around to it and they came out so well. I replaced some of the chocolate biscuits with ginger biscuits, added some orange zest for more of a festive flavour and dipped the truffles in dark chocolate which I decorated with mini fondant holly leaves, sprinkles and glitter.     This is one of those recipes where you can let your creativity run wild. Dip the truffles in dark, milk or white chocolate and decorate with any small fondant shapes, assor ..read more

The holiday season is on the horizon (are you counting the days like me?) and that means there’ll be lots of gatherings coming up. This latest recipe is perfect for entertaining and I hope you’ll love it as much as I do. Besides tasting great this snacky delight is also something that you can whip up relatively quickly. The crackers can be baked in advance and the feta can be whipped in minutes, so there’s no last minute stressing just before your guests arrive.     I used classic basil pesto with this creamy whipped feta as it’s my absolute fave, but there’s nothing stoppin ..read more

Apple crumble muffins

We love a batch of freshly baked muffins around here, and these delightfully soft and light apple muffins with a crispy crumble topping are fabulous for tea time. Apple and cinnamon is a flavour match made in heaven, and these muffins come together easily using ingredients that you’ll find in your pantry.     If you can resist the urge to eat all the apple crumble muffins in one sitting then you can pop the leftovers in the freezer and save them for another day. I always try to save a couple to pull out in a snack emergency (totally a thing).     If you’re a muffi ..read more

BOO! It’s Halloween tomorrow, and kiddies all around are looking forward to the big day! My kids are putting the finishing touches on their costumes and planning their walking route around the neighbourhood, it really is lovely to see them so excited. This latest recipe is a Halloween treat that kids, both young and old, can get behind!     Biscuit truffles are incredibly easy to make, and ideal if you want to get the kids involved in the kitchen. Little hands will love rolling the simple filling into balls and getting creative with the decorating. There’s no baking or cooki ..read more

Apple tart
Cupcakes and Couscous

This beautiful spring dessert is fit for high tea! Apple tart does require a little time and effort, but you’ll be rewarded with a show stopping treat. The base is a sweet shortcrust pastry that can be made in a food processor (love that) which is filled with creamy vanilla bean crème pâtissière. This is topped with slices of apple and an apricot jam glaze – an absolute treat.     The shortcrust pastry and crème pâtissière can be prepared a day in advance and stored in the fridge to save time. The pastry can be made by hand or in a food processor, I’ve included instructions ..read more
