The great thing about making small batches of this jam is you can use what you have – even 2-3 plums, just remember the ratio of fruit is equal to the ratio of sugar
Chai Spiced Plum Jam (small batch)
Ingredients:
1:1 ratio of fruit to sugar e.g.
300g Plums
300g Sugar
1tsp chai spice (ground cardamom,cloves, cinnamon)
10ml lemon juice
Method:
1. Roughly chop plums and add to a small pot with sugar, lemon juice and ground spices.
2. Simmer on medium heat until it reaches 104 degrees Celsius.
3. Sterilize a jar and fill with hot jam, seal lid tightly and refrigerate after opening.

I had a whole list of yummy things to make in the holidays, but I was obviously living my best life and didn’t get to this one. I have an old recipe from 2017 of Korean BBQ chicken wings here but have been meaning to re-do it once I had Gochujang. This new recipe is not that different to the old one and uses similar ingredients but the ratio’s are different as well as the cooking method!

This cinnamon loaf is a quick bread as it uses bicarbonate of soda to rise. It literally is quick and not to mention really easy to make! The secret ingredient is Fair Cape Dairies Amasi, which they kindly sent to me.
Ingredients
2 cups flour
1 cup white sugar
1tsp bicarbonate of soda
1/2 tsp salt
1 cup buttermilk
1 egg
1/4 cup oil

As promised but a little bit later than expected – the recipe for the prawn curry I made last week. I added coconut milk to this, but if you prefer a tomato-y curry then leave it out.
INGREDIENTS:
350g butterflied prawns, cleaned and de-veined
1tsp cumin seeds
1tsp black mustard seeds
6 – 8 curry leaves
1/2 onion, chopped
1tsp garlic paste

These waffles were inspired by my favourite breakfast/meal from Woolworths Cafe, which is the corn waffles with poached eggs. I made it for supper, so it needed to be a bit more substantial and served it with crumbed chicken and sriracha mayo. You can pretty much add anything you like to this batter, so go wild.
INGREDIENTS:

This cake is also known as crazy cake, but I prefer the name “the Great Depression cake”, because it has no milk, butter or eggs and these ingredients were really scarce and expensive at the time. Its a quick and easy recipe, very straightforward. Everything gets mixed in the pan that it bakes in and you literally need to equipment. A fork or whisk will do. Saying that, it really does need some sort of icing or topping. I made a simple chocolate ganache and added some unicorn sprinkles for a touch of whimsy. This recipe is great when I need to use up yoghurt before it expires. I don’t know why but I always end up with about 1 cup that takes forever to finish. I normally make the two ingredient dough and use it up that way, but this one is really good too. I found a Donna Hay recipe which I changed up quite a bit because I didn’t have most of the ingredients but it inspired this so…take a look.

I bought a pack of four corn on the cob, because I felt like eating roasted mielies…and then I never got down to making them. In a desperate attempt to salvage them, I cut the corn off the cob and pan fried the whole batch to make salad bowls with. I thought it was a great idea and would last me the whole week. Well, it did…because I didn’t eat it like that either. So here we are, third time’s a charm: Savoury sweetcorn muffins.

I was in a baking mood, but not in a cleaning one so I made these blueberry muffins using Golden Cloud Vanilla Muffin mix. I added a few handfuls of frozen blueberries and made a streusel topping to give these an extra oomph! It did not disappoint.
