I was really excited about this recipe while I was making (and eating it) but then I started second guessing myself for creating a low and slow stove top stew recipe instead of using the crockpot. I am soooo happy to finally be back with a new recipe! This last year and a half have been a crazy whirlwind of house hunting, house selling and remodeling. Something about hearing the word madeleine conjures up images of teatime in France for me. Sitting in a little cafe with a steaming pot of tea, a plate of buttery madeleines and my favorite novel. I was a little nervous to start baking these since they seem tricksy but when I found a madeleine pan at Goodwill I knew it was time. Hello friends! It’s been too long since the last post, but I’ve been busy prepping the house to move. I’m happy to report that we are as ready as we can be. Happy belated Easter! Last weekend I made some carrot cake cupcakes for Easter which were fun and delicious, (You can check them out on Instagram.) and this week I decided it would be fun to turn them into Healthy Breakfast Muffins. It feels like the right kind of thing to eat in the springtime. Plus I needed to use up some bananas! I started with bananas and carrots and added pecans, oatmeal and some whole wheat flour. Let’s talk chocolate! Easter is right around the corner and everything pastel and cute is trending but I’m looking for that chocolate fix this week. Are you a chocolate lover?
