Travel should be fun and exciting, even when you have food allergies or restrictions. Each year we travel to Door County. It’s a simple trip we’ve made every summer since the kids were born. Door County is just 3.5 hours from where we live, and the drive isn’t too bad. Usually there is at least one stop on the way there to grab a snack and take a break. Once we get past the Green Bay Packer’s football stadium, it’s smooth sailing and everyone gets excited to make a stop in all of our favorite small towns up the Door Co peninsula. Sister Bay is the town we have been staying in the last few yea ..read more

Downhill Pandemic Skiing

Outdoor activities seem to be more popular than ever before due to the ongoing pandemic.  One activity that we have always enjoyed is downhill skiing. I learned how to ski when I was young, and this year I had the chance to continue teaching Chloe and Carter how to ski as well. In this post I’ll share some tips on how we skied this weekend in a relatively safe way. Before skiing, make sure you grab a large tote that is light weight and can get wet from snow. We packed all of our gear in this tote and took it with us to bundle up once we got to the ski rental area. This bag then held our ..read more

After trying too many pumpkin bread recipes, we determined that everyone likes their pumpkin bread a little different. Some like it more dense, more (cringe) moist, more pumpkiny, with banana or super light and fluffy. So many variations on such a great recipe. However, we think we have the goldilocks of all chocolate chip pumpkin bread recipes right here. Ingredients 1 3/4 cup King Arthur Flour 1 tsp baking soda 2 tsp Penzeys cinnamon 1/4 tsp Penzeys nutmeg 1/4 tsp Penzeys cloves 1/4 tsp Penzeys ginger 3/4 tsp Penzeys salt 2 eggs room temperature 3/4 cup granulated sugar 1/2 cup brown ..read more

The last time we talked, it was March of 2020, and our world was changing quickly. Our little city was in the process of locking down, closing schools + businesses, and grocery stores were jam packed with panicked shoppers. Initially, we thought we’d be at home for a few weeks, muddle through some PJ days and homeschoolish activities, and life would resume. Well, here we are, hanging out in our new normal, creating new routines and finding gratitude in the smallest of things. While all of us are experiencing something very different, we’re also all in this craziness together. Wherever you are ..read more

If you’ve followed me for a while, you know how much I love Cara Clark Nutrition’s healthy eating plans. Occasionally, I get into a cooking / healthy eating rut. Lazy, I don’t want to plan my own menu or search for new recipes. I also need a gentle reminder to keep my body moving every single day. Photo by Pixabay on Pexels.com Cara Clark’s plan fits my lifestyle so well. There are no games, counting, or crazy diets to follow. This is all real food – stuff you normally get at your local grocery store with some guided work outs and easy to make healthy snacks. The part that I love the most is t ..read more

This past weekend was glorious. It’s the kind that I dream about, work really hard toward and cross my fingers it works out. And it did. Two of my very good friends and I planned a weekend away to Door County and it was the most delightful weekend I’ve had in a really long time. As a Mom of a kiddo with food allergies, the feeling of being ON is enhanced a bit. And it’s important to realize this, and take a break from time to time. It’s hard. I know. But with a little planning and some good luck, you’ll be on your way to some much needed R+R as well. Here’s what we did, maybe you can try some ..read more

It’s tricky to take part in some of these made up holidays our nation throws at us. Today is national donut day, I had no idea until I saw the news today. So, to help my nut allergic kiddo feel part of the crowd, we use Entenmanns Cake Donuts as our go-to safe donut. I also have a piece about how we do Dunkin Donuts. And like all other food related items, check the labels first. Enjoy your day full of donuts ..read more

It was 90 in Wisconsin today and we have gone from winter to summer in a very short time period. And to top it off, both kids are sick. So when we are stuck inside, I bake. The kids had some energy today, but we did watch 3 movies. Emoji movie isn’t half bad the 3rd time around. At least we didn’t have to watch My Little Pony. Today we had a ton of bananas approaching “extreme ripeness” so this recipe came in handy for the long holiday weekend. It’s very easy and most of it you already have in your pantry. It’s the perfect addition to any cookout this weekend. Or breakfast. Keep in mind thes ..read more

Perfect Corn on the Cob

A few days ago, the kids really wanted some corn on the cob. It is not corn season, but who am I to say “no” to kids wanting to eat healthy food?! So corn it is! Since I’m not a griller, I needed to find a quick, weeknight friendly recipe to whip up this corn on the cob. Simple Genius had the perfect recipe. Typically we grill corn on the cob, but roasting it in the oven provided to be even tastier and juicier than usual. Ingredients: Aluminum foil rimmed baking sheet 4 ears of corn, husks and silks removed butter sea salt Directions: Preheat your oven to 450*  Prepare corn by taking ..read more
