My friend Wendy texted me the other day and asked for a linzer cookie recipe.. which resulted in me thinking about how I don’t have a recipe posted for cookie-press friendly cookies. I know, they’re not the same cookie. But that’s just how my brain worked. So here we are- sharing my recipe for super easy cream cheese cookies. Not very sweet, tender/soft, and easy to pipe or press into cute shapes with minimal effort. Slap on some chocolate drizzle or sprinkles and you’ve got a quick, kiddo friendly project. Please watch our video for the piping techniques. Download our holiday themed templates ..read more

Introducing: My Custom Bakes
Borderlands Bakery
by Lisa He
2y ago
Hi there! Lisa here, owner of Borderlands Bakery. In my ten years of cookie decorating, I spent 5 of them taking on custom orders for decorated sugar cookies and french macarons. Having lived that custom-order life and after talking with thousands of other bakers, we know first hand what a PAIN it is just to get the information from a client let alone get them to order! Then, having to manage multiple orders in the chaos of busy seasons turns a fun, creative outlet into a chore…  and we knew there had to be a better way. Of course, there are existing tools on the market that get us p ..read more

How to Freeze Cut Out Cookies at Various Stages
Borderlands Bakery
by Lisa He

I see all of you getting ready for the holiday cookie season and one of the most commonly asked question right now is: Can you freeze cookies? The short answer is: HECK YES. But there are some important factors to consider, so let’s dig in. Most cutout cookies can be frozen at many stages: as dough, as a baked naked cookie, as a fully decorated and heat-sealed cookie. Some people freeze cookies in-between layers of decorating: I don’t recommend that unless if you *have* to because it’s so much more work than it’s worth. Let’s break down each stage and discuss the nuances. But first a disclaime ..read more

Easy Matcha Truffle Recipe
Borderlands Bakery
by Lisa He

One of my favorites treats as a kid were the chocolate truffles my dad used to buy from Costco. You know what I’m talking about: The texture was silky smooth, and I’d always choke a little on the cocoa powder. But it’s all a part of the truffle experience. And at the end of the day, for me, food is about the feelings and memories. This year, Matcha Kari (matcha.com) approached me to see what ideas I might have for Matcha related recipes. Aside from the Dalgona Matcha recipe and Matcha Monster Cookies for Halloween, I wanted to create something simple, but elegant.  If you haven’t tr ..read more

Baked By Dave’s Royal Icing Calculator
Borderlands Bakery

My friend Dave of Baked by Dave has given the cookie decorating community a huge gift: his royal icing calculator. One of the challenges of decorating cookies is estimating how much icing you’ll need for a project: make too much and it’s wasteful. Make too little, and you have to color match again; what a nightmare! Dave is relatively new to cookie decorating (less than 2 years in!) but he’s already made a huge impact in the cookie and macaron communities – I feel pretty lucky to know him! Dave (whom I met for the first time at Cookie Con Dallas) is graciously sharing this resource with you al ..read more

If you’re looking for a fun project with the kids this Halloween, look no further. I’ve teamed up with my friends at Matcha Kari to bring you an easy matcha based cookie recipe with easy decorations- a cute cookie with minimal work. This cookie base keeps its shape well and is not too heavily matcha-forward. You get a little bit of creaminess and bitterness from the matcha, and if you are a hardcore matcha fan, I recommend you increase the matcha content by 50%. If you aren’t familiar with Matcha, you can read up about it HERE. A staple in Japan and many eastern Asian country, Matcha has been ..read more

I’m incredibly excited to be introducing a suite of courses taught by my friend Malek Binns and myself. I have known Malek a few years and we organically became friends via Instagram. We’ve met in person a few times, and for this collab, I invited Malek to stay with me in my home for almost 2 weeks to work on this project. It has been a ton of work and we feel very fortunate to share the fruits of our labor with everyone. If you don’t know who Malek is, definitely go check out the Peach Cobbler Cinnamon Rolls recipe we’ve posted on YouTube – not only do you get a delicious recipe by Malek, bu ..read more

Borderlands Bakery

For those of you who live and breathe Instagram (i.e. many creators/influencers/brands), the recent changes “officially” announced by head of IG Adam Mosseri probably didn’t come as much of a shock — IG has been undergoing massive changes for the last year and have added many new features including the big one: launching Reels in 2019 to be competitive with other successful platforms like TikTok. (Remember when they added Stories to compete with SnapChat?)  I have written several articles before regarding my experiences with IG growth. You can find my first article from 2018 HERE. And an ..read more
