Blue Bell ice cream. I’d be willing to bet this is one of the only times a story of a Mexican chef making simple yet extraordinary dishes in the highlands of Chiapas would start with Blue Bell ice cream. But for David Hernández of Comal, it did. San Cristóbal de las Casas is a special place. It’s a small Spanish colonial city tucked into the southern highlands of Mexico, in the state of Chiapas, far removed from the usual tourist hotspots. If you've heard of San Cristóbal, you probably drink way too much coffee or know that Coca-Cola decided to wreak havoc and get its grubby li ..read more

Hey friends, First thing, Substack released a new referrals feature, so I figured I'd turn it on for now and see what happens. I might tinker with the referral structure, but for now the rewards are set at: 3 referrals = 1 month free 5 referrals = 3 months free 25 referrals = 6 months free And a reminder, paid subscribers get access to a monthly members-only email (right now, it's the Postcard series, with the next one coming out soon!), and most importantly, your support “unlocks the commons” and keeps most of the work here paywall and ad-free for other readers. I also thought about some m ..read more

TDG #023 - Your Guide to Buenos Aires

Hey friends, During my first trip to Buenos Aires, a friend I met there, Fernando, told me a story. During the previous financial collapse in Argentina, which lasted from roughly 1998 - 2002, he and some friends had just saved up enough money to get a small sailboat. After a few months of delays, they finally managed to get the boat in the water. What would normally be a day for celebration turned into one of the worst nights for Argentina in recent memory. The economy had contracted more than 20%, unemployment hit 25%, and banks refused to give people their money. Protests blanketed the city ..read more

Hello friends, To this day, I remember my first international trip pretty vividly. It was 2017, and I had just paid off my student loans. Three years of saving damn near every penny of my paycheck - quite literally eating rice and beans most days - and offering it as a sacrifice to the U.S. Department of Education. So I wanted to treat myself. I never really traveled abroad growing up, save for the occasional family trip to Canada (does that even count?). But for whatever reason, I had itchy feet. Maybe it was watching too much Anthony Bourdain. Perhaps it was growing up reading and watching ..read more

Hello friends, This is Skylar, and welcome to another edition of The Daily Grog newsletter. In a way, we've come full circle. Last year Steph and I embarked on this year-long adventure around the world across multiple countries and continents. We started the trip last June (2022) with a month in Buenos Aires and found ourselves back in Buenos Aires just a few weeks ago. It's official, Buenos Aires has stolen my heart. I think I knew the first time around, but the last few weeks officially sealed it for me. Buenos Aires contains multitudes. It's a world-class city with few rivals - there's art ..read more

TDG #020: On A.I. and Travel (Part 2)

Hello there friends, Last week I sent out part one of my two-part series on A.I. and travel, where I mostly chronicled my experience using ChatGPT to take me around Madrid for the day. This week is a more philosophical take on the matter. Before we get into anything, let me be clear that I am not an A.I. expert by any stretch of the imagination. The nuts and bolts of how it all works is far beyond my decidedly averaged-sized brain. So rather than pretend to be an expert on the subject, I'll keep my comments to how I think the technology of A.I. will impact how we explore the world. When I fir ..read more

Greetings friends! This is Skylar from The Daily Grog newsletter. At some point, you decided it would be a good idea to give a crazy person your email address and risk wasting your time once a week. This might be one of those weeks. Today is the first installment of a two-part series on the intersection of Artificial Intelligence (A.I.) and travel. First up is a small test I did with ChatGPT back in January. Next week will be more philosophical. A.I. is a tricky topic to talk about for oh so many reasons. It's new and highly complex tech to understand - hell, even a good chunk of its develope ..read more
