Remember those old articles about grappa? And the cheatsheets on fine and marc? Think you knew all about spirits made from wine must? Then read this article to be sure!
Indeed, as we have often said here, the world of spirits has also developed not only because of alchemy but because it was an optimal preservation technique and above all it allows to use everything and not to make waste. Grappa and other distillates coming from the distillation of wine must are the best example. They were developed because it was necessary not to waste this must, obtained after so much work.
That’s why we find ..read more

There’s a trend we’ve been spotting about for a few years now: hybrid spirits. And this trend is becoming more and more important. Recently it is
a hybrid between whisky and baijiu that we saw.
What do you think about it?
Former Edrington whisky maker Max McFarlane has partnered with master distiller Shen Caihong to create a baijiu and Scotch whisky hybrid.
As I write this article it is still due for May 2022 in the UK.
Did someone try it?

I came across an article on the BBC website that I have to share with you. It talks about the sense of smell, this sense often neglected and yet indispensable when tasting a spirit (as we remind here).
This article relates attempts of TV communicating not only sound & images but also smell. Here is the source and an extract of the article:
In the movie era, attempts to add scent began as early as 1916, when one cinema owner accented a showing of the annual Rose Bowl American Football game with rose oil.
Then came Smellovision (or, as it was initially called, Scentovision). Unveiled at the ..read more

As we have seen for a few years*, there are more and more brands of adult beverages sometimes called non-alcoholic spirits on the world market. Some imitate the most famous spirits like gin or rum.
Others present themselves as botanical drinks beyond the existing categories. Some of these non-alcoholic spirits are distilled, while others are more like flavored water with additives and preservatives.
Some of these non-alcoholic spirits use alcohol in their production while others avoid alcohol altogether.
In Europe and the United States non-alcoholic beverages are defined as containing less tha ..read more

The series continues! All the classes about whiskies are online now. Today, we will zoom on Irland with two specificities one can find only there. Let’s dive!
The mash bill
Irish whiskeys often mix malted and unmalted barley in their ground recipe.
Three distillations
Irish whiskeys are often distilled three times.
1. The wort/wash is heated in the first still (a wash still).
2. Then we move on to the second still (“still for low wines” or “feints still”) where more impurities are removed and the tails are collected.
3. The tails are then taken to a third still (alcohol still) where a furthe ..read more

As you may have noticed Spiritsfully is zooming on the world of whiskies these days. Today, let’s look at some practices that can be found in the US only!
A warning first:
There are terms that are only found in the US, they have already been mentioned on the intro auction to whisky page because they correspond to differences between American and British English.
There are some terms that only exist in the production of American whiskies because they correspond to a specific manufacturing process, for example for the backset process. However in a globalized world, you may also find producer ..read more

Let’s start exploring the specificities of the whisky production. Today we are going to look at one process that is specifically Japanese.
Or at least they elevated the process into an art in such a way that it characterized Japanese whiskies today. It has of course be copied else where, this process is named…
Crystal clear wort
In the brewing and distilling industry, there are two types of wort that can be recovered after mashing: cloudy and clear. The difference between the two is as simple as it sounds; the wort liquid can either be cloudy or clear. One isn’t necessarily better, per ..read more
