Our recent visit to Abufeira was our first trip abroad for three years due to covid restrictions
Being a coeliac eating out safely is an important requirement. Albufeira on Portugal’s Algarve coast was chosen as the destination, a little research via Google for “Gluten Free Albufeira” revealed a host of restaurants and cafes.
We were based in the Paraíso de Albufeira this was chosen for it’s location not it’s menu and we never ate at the hotel.

Following on from my review of The Pie Life Gluten-Free Pies here is my review of their gluten-free Sticky Toffee Pudding.
Sticky toffee pudding is one of my favourite puddings. It was one of my popular lines when I ran the bakery. My son's girlfriend at the time wouldn't eat normal sticky toffee puddings because they had dates in but would eat mine, they still had dates in but I didn't tell her that and she loved them.

I was contacted by The Pie Life and ask if I would like to try a selection of their pies, well being an ex-pie maker I jumped at the chance to try them.
I have seen them Facebook and are getting some fab reviews.

I was contacted to say that they were going to be delivered the next day and when they arrived they were well packed and still frozen and the ice packs were still frozen solid.
I kept two pies out for our tea and a crumble for Keith for his pudding.

I do love pancakes and do have them all year round and not just for pancake day (Shrove Tuesday)
This is an easy recipe too, I do the crepe version and not the American ones they are easy to make and you can make beforehand and warm them up or freeze them.
Ingredients:
100g gluten free plain flour.
2 large free range eggs.
300ml semi skimmed milk.
Oil for frying
Method:
Add the ingredients together and whisk until smooth
Let the batter stand for 10 minutes.
Heat a small amount of oil I say 1tsp size in a small frying pan until hot and smoking.

On a cold day you need something that is warming and hearty.
When we visited Hungary last year we did try the local food and I went to the indoor market and got some Hungarian paprika and it adds to this dish.
Ingredients
1kg lean braising steak
frylight
2 large onions diced
3 large carrots sliced
250g mushrooms (halved)
2 celery sticks chopped
1 tsp lazy garlic
2 tsp smoked paprika
1 tbsp paprika
1 400g tin chopped tomatoes
1 stock pot
600ml cold water
300g frozen mixed peppers

This recipe is perfect for bonfire night or on any winter’s night its comforting and warming.
I serve this with custard its sticky and the ginger and is a hit our house.
Ingredients:
175g black treacle.
175g golden syrup.
175g brown sugar.
175g butter / margarine / dairy free version.
350g gluten free plain flour.
1/2 tsp xanthan gum.
1/2 tsp bicarbonate soda.
2 tsp ground ginger.
2 tsp mixed spice.
150ml milk/ dairy free version.
1 large free range egg.
75g glazed ginger.

At this time of year the pumpkins are abundance and you can make some delicious recipes with the flesh.
These little Bundt cakes are a great treat if your watching your waistline as they are healthy too.
Ingredients:
For The Pumpkin Spice
3 tablespoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cloves
Mix all the ingredients together and store in a jar
For The Spiced Pumpkin Puree
100g of steamed pumpkin or butternut squash.
2tsp of pumpkin spice.
40ml black coffee

This Gluten Free Taco in a Bowl recipe is a quick and easy recipe to follow
It’s full of flavour and for that extra hit add jalapenos if your brave enough.
To make the bowls you can pick the Taco Moulds up at Amazon.
Ingredients:
1 pkt free from tortilla wraps ( sainsburys own or Tesco’s own ).
750g 5% mince beef.
1 medium Onion chopped.
