I recently treated myself to a set of cast iron pans. I wasn’t entirely sure how they worked or what different things I could do with them but I knew that one of the first recipes would be a skillet cookie and it did not disappoint! For this gluten free recipe, I used Nairn’s Apple and Cinnamon Oats Your Way and they gave this recipe a gorgeous autumnal feel! Perfect for this weather! Now I wouldn’t be much of a Scot if I didn’t make a tasty oaty cranachan with the new Nairn’s Oats Your Way, would I!? Normally, cranachan would be made with raspberries but I was excited to see how the blueberry flavour would lend itself to this Scottish dessert and I’m sold! I’m a huge fan of Millionaire’s shortbread but I’m very particular about how I like it! A thin layer of chocolate on top, lots of gooey caramel and ideally a flapjack base!! I’m fairly sure these are quite a Scottish thing but I’ve always been a huge fan of empire biscuits! If I had to pick one “biscuit” to live off, it would be these! It took me a while though to get round to trying to make them gluten free and I’m so glad I eventually did! They taste just as good as the regular ones and are actually really quick and easy to make! Recently, I was very kindly treated to the new Simply Italian, Simply Gluten Free recipe book by Anna Del Conte and Michelle Berriedale-Johnson and was so excited to get stuck in! I’d say I’m quite well versed when it comes to the stereotypical Italian food- pizza and pasta- however this book opened me up a whole new world of wholesome and traditional Italian cooking! Now I can’t remember the last time I had a swiss roll! But I remember when I was younger, we used to head off to Tesco to buy the really cheap ones for like 7p! Those were the days!
