I’ve been on a salad kick lately. Once I started serving Avery solids, I wanted to make sure I was eating with her, but I felt too rushed with dinner. So instead, I started making starter salads. And I personally don’t want no little baby b*tch salad. I want a salad that has flavor and personality and depth. Ok so I’m going to need you to stop what you are doing and make this salad. Now before you get your panties in a twist because there is not one but TWO foods that aren’t paleo in this recipe…just breathe. We will get through this together. Don’t want to eat farro? Why do I always think of salads of having to have greens? Salads can be whatever you want them to be…like fruit and cheese. And burrata cheese is LIFE! I think it may be my favorite cheese of all time. The other day, when I really had no clue what I wanted to make for lunch, I found some peaches and fresh apricots in the fridge and decided they needed to be made into a meal. Shrimp is something I often forget about. But in the summer, it’s the BEST! It doesn’t take long to cook so that means you don’t have to have your stovetop on for very long and it’s so refreshing compared to some of the heavier protein options out there. I recently started getting shrimp delivered to the house in my monthly meat order and I’m so glad I did. Now I make shrimp salads weekly because it’s so damn easy! There are two things I used to HATE: salads and children. And here are I am, 9 months pregnant…and craving salads every day. It’s all I want. Who am I? If people think other people can’t change…they are wrong. I am salad proof of that. But what I’ve really figured out over the years is that salads need a lot of dressing up. Summer is here…which means hot food is behind us, right? Ehhhhh. Probably not. But if it’s too hot for a hot bowl of pasta today, try this pasta salad instead! It is truly delightful. Pesto is the perfect condiment for any summer side dish or main dish, especially if your garden is overflowing with basil and you want to make your own. When I was in New York a couple weeks ago, I ate at a cute little Australian restaurant called Ruby’s. This spot is known for its salads and bowls, so I obviously needed to go there…bowls are the only way I would prefer to live my life. But when I saw their pumpkin spinach salad on the menu, I decided it had to be mine. And this salad DID NOT disappoint. It was absolutely delicious. It’s 68 degrees here in Denver. There is no more denying it. Fall is here. And that bitch ain’t going nowhere. My heart is broken for the summer that will be left behind. I already miss her and I’m currently trying to figure out where I can go this winter to not even feel the hint of cold in Denver this year. Arizona maybe? Yesterday I said that the 4th of July is all about fingerfood since I gave you some festive Brownie Bites to snack on…but I might have to take it back. Mostly because it kind of, meaning really, grosses me out when people eat with their fingers. So today we are going the opposite direction. No finger licking allowed around here. You must use a fork.
