Macro-friendly Cowboy Caviar Salad = another great reason to use your alligator chopper. Okay, seriously. When it comes to kitchen gadgets, I usually just prefer a sharp knife and a cutting board, but this alligator chopper is just too good.
I mean the perfect little veggie cubes for salads, roasting, pico de gallo, soups, etc. And I know some of you will cringe, but to clean it, I just usually just bang the pieces on the side of my sink and give it all a good hot rinse!

I love dinners that I can throw together quickly on busy nights. And this Tuna Pasta Salad fits the bill. It’s so easy to make and stores great in the fridge. You can even make it for dinner and pull it out for lunch the next day. Two meals for one meal’s amount of work? A total win.

Shrimp is such a great lean protein source. I’ve definitely realized you either love or hate it–but I love it! With one 3 oz. serving of shrimp, you get 20 grams of protein, essentially no fat or carbs, AND you can cook it in less than 10 minutes – a total win. This Cold Shrimp Salad keeps well in the fridge for an easy lunch or for when you’re in a pinch for some quick protein.
