I’m baaaack! It has been quite a minute since I have written a blog post. Pandemic living has certainly brought it’s share of challenges, but I am looking to get “back into it” (as my husband always says whenever we start working out again after going on a hiatus) and pick up my blog right where I left off! Greyson has been obsessed with zucchini muffins for the past year. He eats one or two for breakfast at least 4 days a week. Maybe obsession is an understatement? I always try to have some on hand for his breakfast and these freeze very well, so I can make a full or double batch at a time. I also like that he is able to get at least veggies in his system in the morning, even if it’s in the form of a muffin. I’m trying to be somewhat more prepared this year with getting my posts out BEFORE the actual holiday, so here we go! Easter 2020 was a complete blur.
