CHS took you inside new Capitol Hill cocktail bar Guillotine, the latest addition to Broadway’s nightlife, earlier this week. Here is a look at the latest addition to Broadway’s day-life. Seasmith opened a couple weeks back above Capitol Hill Station after years of anticipation. The casual hangout from the Burien Press family has been part of the plans for new businesses in the mixed-use development above the busy transit station but the pandemic and bureaucratic delays made for a long wait. Your order is now ready. The new hangout is in “preview” mode, serving coffee and cafe g ..read more

CHS reported last month on the opening of Guillotine, a new Broadway cocktail joint from a duo of veteran Capitol Hill bartenders. Here is a look inside. Colin Smith and Andrew Larson’s new venue has filled a mint julep-sized hole in the Broadway bar scene, serving as a worthy next step for the space where Southern-flavored Witness closed last spring after nearly 10 years of business on the street. Smith and Larson say Guillotine is all about execution. “We will have the tools to do very elevated things,” Smith told CHS earlier this year. “But want everyone to feel co ..read more

Seattle’s 50th year of Pride celebrations started with a party Saturday in Volunteer Park. Organizers from the city’s official Seattle Pride group say some 12,000 people attended Saturday’s free event of music, drag, DJs, dance, and fun that has grown into the annual kickoff for June’s festivities. While there will now be a lull before the largest Pride events take place in Seattle to end the month, you’ll find plenty of smaller parties and celebrations across the city and at venues across Capitol Hill including Seattle’s strongest concentration of queer bars and clubs up and down Pike, Pine ..read more

(Image: Corvus and Co./Jim Tillman) Capitol Hill bar Corvus & Co., in all its “mystical” glory, is being passed on to new owners. Don’t worry — they like magic and fun too. First time food and drink entrepreneurs Liv Cruzat and Nick Crowley intend to preserve and foster the community that Corvus & Co. has built over its eight years on North Broadway. They are excited and ready to dive into this venture, but they aren’t looking to change the game. “We love the concept, the energy, the employees,” said Cruzat. “We believe in the heart and soul that exists here and we want to maintain a ..read more

For Capitol Hill neighborhood bars, mergers and acquisitions tend to be friendly takeovers. Changes at Rose Temple won’t mean the end of community and opportunities like food and drink pop-ups on E Olive Way. Southwest-themed bar The Wash is opening in the former Rose Temple space this week. The owners Emilio Esparza and Nick Fizer have brought a new look to the space with a blend of Route 66 nostalgia and Yuma flair. The first-time owners also brought support from Seattle’s food and drink community to the mix. “We’ve been in the Seattle bar scene for over a decade and have built strong connec ..read more
