I'm not really into pumpkin spice lattes, but a pumpkin pie parfait for breakfast is most certainly up my alley. This make-ahead parfait is creamy and dreamy, you won't be disappointed.
Pumpkin Pie Breakfast Parfaits
1 15-oz. can pure pumpkin puree
2 tsp. cinnamon or pumpkin pie spice
½ tsp. vanilla extract
16 ounces cottage cheese
In a medium-size bowl, mix the pumpkin puree with the cinnamon/pie spice and vanilla extract.

It doesn't look like much, but oh boy is this salad ever delicious!
I love a good kale ceasar, but completely fell in love with this particular recipe after watching this video by kitchen vignettes. She makes everything look so simple, so fresh, and so good. Plus I can never get enough of the Good Lovelies, the band showcased in the video.
Shredded Kale Caesar Salad

Wait, what? Yes, a vegetarian "meat sauce" that is as “meaty” and satisfying as the real thing.
This recipe comes from Yotam Ottolenghi’s cookbook, Flavor. Like many of his cookbooks, nearly all the recipes are focused on vegetables. Flavor is a celebration of vegetables and is a beautiful thing indeed.
Prepare yo self, this recipe takes sometime and requires few specialty ingredients but overall it’s fairly easy to make and promises a cozy Sunday dinner vibe.

Yes, I am suggesting that you make an alcoholic beverage to help with your cold and flu symptoms. In fact, I also recommend that you make one even if you don't have cold or flu symptoms, because life is short and hot toddys are delicious. I found this recipe over the the Herbal Academy, so it feels extra legit to be used as a remedy. They tell me that "hot tea is soothing and the tannins offer some astringency which can help to tonify and astringe weepy tissues. Anyway, I’ve had “dutch baby” on my Foodie To-Do list for years. It’s embarrassing really. To be honest, I’m just not comfortable with cast iron skillets. But enough of that nonsense, I’m going to get comfy one delicious dutch baby at a time.

I am many things, and quite possibly near the top of that list is cassoulet lover.
Cassoulet calls to me, especially now that the sun declines to linger in the evenings and there is a crisp chill in the air. For me, cassoulet is one of those beautiful things in this world that is far more than the sum of its parts. Traditionally, cassoulet is a multi-day process but this recipe promises a satisfying and complex result in only 30 minutes. This soup is incredibly satisfying on a chilly spring or fall evening. The broth is surprisingly complex-tasting for so few ingredients; I find it reminiscent the flavours and textures found in a wonton soup. I just love turnip greens (including their tender stems) in this recipe, but if your greens look a little ragged or you want to skip the turnips altogether, I’m pretty sure you could substitute them for bok choy, spinach, chard, mustard greens or even kale.

I am in love with this dish. Not only is it incredibly beautiful, but it also has an addictive combination of textures and flavours that have me going back for more. Each component is delicious all on its own, but the genius of this dish is that they also perfectly complement each other when taken together.
I really can't say enough good things about it. it's divine, you should try it.
I skipped the sultanas and the nuts, I also used regular yogurt instead of the thicker greek variety. Also, I've made this recipe with beef and lamb, both are delicious.

This recipe is so obvious, I can't believe it has taken me this long to try it out!. Of course you can make a delicious spanakopita with a mix of garden greens, it isn't just for spinach! I got my inspiration and this recipe from chef Sohla El-Waylly. Check out her mixed greens spanakopita video on instagram. It's very helpful if you want to see how she works with the phyllo.
