I am putting in a lower deck with a 8 foot long table. I would like to build in a [yet to be purchased] minimax at one end to do grill to plate cooking. Any thing reasonable sized would be on the upper deck large egg, but things like skewers/kabobs  or dessert things like smores/waffles is what I am thinking. I want the MX egg to open out toward the table, giving people a view of the grill as they pass their plate to be served something. The problem is that puts the bottom vent under the table which would be awkward for adjusting air flow but impossible for cleaning. What I am consideri ..read more

I've had my Smobot for about three years and I absolutely love it. But I'm now on my third temperature probe (the one with the alligator clip that goes on the grid). They just get black and eventually start having only an intermittent connection to the controller. Is that typical, or am I doing something wrong? I try not to let it get crimped and keep it away from the very edge, but is there something else ..read more

Melted aluminum in Egg?

Okay, so cooked a roast today.  Did the regular setup, then turned wick up to high and seared it.  Went back out and the aluminum foil melted and maybe burned?  Now I have white inside my egg and on my rack.  Not sure if melted/redeposited aluminum?  What is best way to clean this mess up ..read more

Roast pork with crushed par roasted new potatoes

I roasted a boned, rolled leg of pork in the large today. I salted the skin to attempt to get some crackling. The interesting part of the meal though was par boiling some new potatoes until they were a little squishy, then draining them and pressing down slightly to crush them a little, then adding them to a cast iron dish with duck fat for about 15 mins to par roast them. Turned out to be very tasty, a variant on straight roast potatoes. Some years back I tried using a smoke stick in my BGE and it always snuffed out. So this past week while jumping in rabbit holes on YouTube, I found a video that explained how the charcoal fires in Komodo grills snuff out the smoke sticks. (Problem explained). However, he suggested doing a cold smoke before lighting the charcoal and claimed it made a difference.  Anyone know anything about a cold smoke, or better yet, has anyone tried this technique ..read more
