Last weekend I made this tasty and easy skillet flatbread recipe together with my son. We used the stinging nettle sprouts that we had foraged in the forest to decorate the breads and to make them even healthier.

This bulgur wheat salad with kale, persimmon and pomegranate and so many other beautiful ingredients is really my favorite salad at the moment. I just love the combinations and everything just complement each other so perfectly.
I’ve made this salad so many times during Winter and I think I will continue doing so while kale, persimmon and pomegranate is in season. There is nothing better than to eat seasonal vegetables, when they are at it’s best!

These blackberry muffins with coconut and cardamom are now officially my favorite kind of muffins! I love everything about them. The sweet taste of coconut and the distinct taste of cardamom, which is a spice we use A LOT here in the Nordic countries. And then of course the star of them all the sweet and little sour blackberries. Don’t we all love them?!

Sugared redcurrants is something that many people here in Denmark make, when its the high season of redcurrants. And it is now! I just love redcurrants and luckily where we live, there is a lot of redcurrant bushes that are free to pick from. So each year, me, my husband and our two sons at 2 and 5 pick A LOT of redcurrants to take home and make somthing delicious out of in the kitchen.

This recipe features a real summer salad and a beautiful blueberry vinaigrette that is bursting with flavour. It is one of my favorite summer salads and I love serving it for guests, as it really lights up a dinner or lunch table.
Right now there are so many blueberries. You can really tell that it’s in season. Both in the supermarkets there are many as well as out in the nature. Orange date energy balls will always be my favorite go-to snack when I need a little extra energy kick for example in the afternoon with a cup of coffee, or at noon before lunch. They are healthy but taste like cake and they are incredibly easy to make. Only 5 ingredients for this recipe, which we like! Right?…
