On March 15, I had the delightful opportunity to taste 5 new additions to the dessert menu at Hyatt Trinidad, and let me tell you, it was a journey of sweet discoveries that left me utterly enchanted. Today, I’m excited to share my indulgent adventure with you and to dive deeper into each creation.
First up – the Pina Colada Gateaux. This was, for me, the most sophisticated offering of the afternoon. Rich coconut flavours mingling with sharp bursts of fresh mint and Malibu-infused pineapple, all nestled within a light coconut “snow” and encased in tempered chocolate bark. It’s a tropical par ..read more

On Monday September 11, 2023 I attended a Peruvian Menu Tasting at the Hyatt Regency Trinidad, hosted by Peruvian Ambassador David Malaga, the Hyatt Regency and Copa Airlines.
A preview of their Peruvian Food Festival, which begins this evening, the afternoon was filled with tantalizing tastes and cultural richness that left me craving more.
Did you know that Peru is considered the “gastronomic capital of the Americas”? Or that it boasts the current #1 restaurant in the world, Central, according to S. Pellegrino’s esteemed Global Top 50 rankings (with three more Peruvian restaurants als ..read more

During the lockdown, like many of you, I found myself with more time on my hands and a desire to be more self-sufficient. As an epicurean home cook with a love for Caribbean cuisine, I saw an opportunity to not only reduce my food budget but also supercharge the nutritional value of my dishes. That’s when I embarked on a journey that would take me from stressed and unsure about what was happening around me in the world to calm and confident – the world of container vegetable gardening.
I started my gardening adventure by choosing the herbs and vegetables I used the most. Chives, ginger, chado ..read more

Long time readers of this site will remember that since it’s early days I have talked repeatedly about one of Trinidad’s true culinary pioneers, Sylvia Hunt. Lamenting the scant attention to her contributions at the time, as well as the unavailability of her cookbooks, I wondered if she was really going to fade into oblivion, as I believe I am of the last generation that would have seen her on TV.
Through the years kind readers assisted my search. One mailed me a copy of their own cookbook. Others assured me that the family was working hard to bring her works back into print. Still nothing ev ..read more

I love freezer meals! They allow me to have one, two, three (and sometimes more) dinners on hand for those days when I am running short on time, energy or both!
Freezer meals offer numerous benefits that significantly enhance our busy lives. They streamline meal preparation, making it effortless to maintain a balanced diet even on busy days. They reduce the need for frequent grocery store trips and minimize food waste, as ingredients can be portioned and stored for later use. This not only saves money but also encourages healthier eating habits. Moreover, freezer meals come in a wide variety ..read more

Nestled in the lush bamboo clusters of Trinidad’s Western peninsula’s Tucker Valley is the Upick Farm, Market & Restaurant.
Last week Friday I enjoyed a leisurely breakfast there with one of my best friends and it was an experience I’m definitely looking forward to repeating!
From the freshly squeezed juices to the delicious offerings utilizing ingredients grown on-site everything we ordered from UPick Farm Trinidad was beautifully prepared and so so delicious.
I didn’t expect my breakfast of buljol and coconut bake to keep me full all day but it d ..read more

Over the course of this year I’ve fallen beyond in love with Jassie Singh’s “The Culinary Heritage of Trinbago”. I try to prepare -at least- one recipe a month from it on my live streams. Last week that recipe was Bhagi Rice!
Simple yet satisfying Trinidadian Bhagi Rice is a wholesome, nutritional side that complements many main dishes, including curries and stews. Bhagi is Hindi for Spinach, making this a “spinach rice”, however what we in Trinidad refer to as Bhagi is not spinach but rather the leafy green known as amaranth. Firmer in texture and more mineral in flavour, amaranth is t ..read more
