Making Kombucha
Bottle To Barrel

Kombucha is tea fermented with a mixture of yeast and bacteria. This concoction of fermenters is known as a SCOBY but we’ll get back to that later. Kombucha offers a wide range of health benefits and can be pretty tasty. The problem is that it isn’t cheap buying commercial varieties. Luckily, making kombucha at home is cheap and super simple. Kombucha doesn’t take that big of an investment to brew. The ingredients are very minimal with just tea, sugar, and a SCOBY with starter liquid. The equipment is equally simple with just a boil pot, glass or ceramic jar, and a cloth covering with a rubbe ..read more

Tropical Milk Stout Recipe

We’re getting a little tropical on this next recipe. My Tropical Milk Stout perfectly melds together coconut, chocolate, and banana. This milk stout provides lots of flavor without being cloyingly sweet. I love a good pastry stout but cannot drink more than one pint let alone a full five-gallon batch. The flavor in the Tropical Milk Stout comes from a mix of a flavored mash and a tincture. This was my first attempt to flavor my mash and boy was I impressed with the results. Banana flour and coconut were added directly to the mash. I thought I had used plenty of rice hulls but I still had issu ..read more

Making A Tincture

Tinctures are a method of extracting flavors from spices and other ingredients via spirits. They are a super simple way to add flavor to your beer, cider, or mead. You can even use them in that experimental chocolate stout cake recipe floating around in your head. Making a tincture can really elevate your next batch. There’s a wide range of spirits you can use with each imparting different characteristics. The key is to stick to things with at least 80 proof (40% abv) and of decent quality. You don’t have to buy Grey Goose but you also don’t want to use the cheapest spirits. A bottle of Smirn ..read more

There’s nothing quite like a bowl of chili to brighten up your day. Whether it be tailgating or a comforting family dinner a warm bowl of chili really hits the spot. Odds are you’ll be drinking a pint of beer with it so why not cook with it too? Try this beer chili with my Patagonia Porter or your favorite dark beer today! Beer can really add a depth of flavor to your dishes. Most beer styles work well for cooking but I really enjoy using a dark beer especially when using beef. My Patagonia Porter really hits the spot when browning up a batch of ground beef. Any English porter or a mildly roa ..read more

Patagonia Porter Recipe

My Patagonia Porter was an English Porter with a mostly Patagonia malt grain bill. Patagonia extra pale was the base malt with Patagonia 90l crystal providing a lot of complex flavors. Wyeast 1728 Scottish Ale yeast let the malt shine with a fairly quick turnaround. The original recipe was an experiment to use all Patagonia malts that actually turned out really well. It took first place in brown ales at the Hammerdown Brewcup competition. Unfortunately, I’ve had to modify it due to Patagonia malt availability. The new recipe replaced the base malt with Simpsons Golden Promise and the 90l crys ..read more

Hibiscus Citrus Hard Seltzer Recipe

Hard seltzers are the current hot trend in the craft beer scene right now. They are generally light in calories with less than five percent abv and lightly flavored. White Claw and Truly are the big dogs of the category but you’ve also probably seen them popping up at local breweries. I was hesitant about trying them but have grown to enjoy one when trying to cut some calories. At the homebrew level, you have two options for making hard seltzers. The first is mixing vodka or Everclear with the appropriate amount of water and carbonate. The second option and the one we’ll be focusing on is bre ..read more

Turbulence American Barleywine Recipe

Barleywines aren’t your typical house beers but you’ve likely seen them on every tap list. These malty monsters often feature caramel bready notes with some fruitiness and a hefty abv. You’ll find Barleywines in both American and English varieties. English Barleywines feature heavier fruitiness, stone fruit, toffee, and earthy notes. An American Barleywine features caramel, raisin, and a pronounced hoppy punch. Turbulence is my take on an American Barleywine. Based on Sierra Nevada’s Bigfoot, Turbulence packs a hoppy mix of Cascade and Centennial with plenty of malt complexity to balance thin ..read more

Blichmann BeerGun Review

Bottling sucks and kegging is great but why not both? I’ve been looking at a way to bottle my beer from the keg for awhile. At first I went with a DIY picnic tap filler but I was never really satisfied with the results. Enter the Blichmann BeerGun V2 which offers a way to quickly bottle your brews straight from the keg. The Blichmann BeerGun V2 brings their typical “over engineered” quality to bottle filling. It features a mostly stainless steel build aside from a plastic handle, rubber seals, and an antimicrobial beer line. The plastic handle keeps your hand from getting cold and helps preve ..read more

Barley Brut IPA Recipe
Bottle To Barrel

You’ve probably heard of the NEIPA but what about the Brut IPA? The Brut IPA is the west coast’s counter to the east coast’s NEIPA. It’s an IPA with all late hop additions and a very low final gravity thanks to a special enzyme. The final result is a dry highly carbonated beer with tons of hop flavor and aroma but not much bitterness. I recently tried my shot at the Brut IPA. Sadly I failed by the numbers with a final gravity of 1.009 but ended up with a very tasty beer. The beer was dry with a ton of tropical orange aroma and great head retention. Overall I was actually happy as a few more p ..read more
