Trevi Italian Restaurant, a longtime Strip mainstay, has closed permanently at the Forum Shops at Caesars Palace. Our sources at Caesars Entertainment say the restaurant space will be replaced with a two-story retail concept. Caesars Entertainment has snagged yet another celebrity chef partner for a collaboration, Rick Bayless. We are not personally familiar with Rick Bayless, but the Internet says he’s a celebrity, so we’re playing along. Things are moving fastly and furiouser at Rio as the resort reinvents itself under relatively new ownership, Dreamscape. Rio is now part of the Hyatt family of hotels, a big deal for the resort, especially given Hyatt’s massive customer database.
