One of my favourite desserts is baklava, but because of its richness, I only indulge occasionally. This lightened up healthier version of “baklava” allows me to enjoy the flavours more often! I grew up eating a lot of curry. It was a staple in my house to the point that it wasn't really anything special. It was the same case for my husband so when we got married and moved on our own, we strayed away from traditional desi cooking. We still enjoy curries when we visit our parents' house or are invited over to someone else's house. On a daily basis we usually like to change it up with more baked items such as baked chicken, fish, or burgers.

Today I woke up to political news that shook me in ways I never could have imagined. I spent the whole morning half-heartedly working but mostly thinking about what this would mean for my family. To be completely honest, I was ready to take the rest of the week off and stay offline to recollect my thoughts. If you come from a South Asian background, when you think of mangos you are probably thinking of the juicy and sweet variety. While I absolutely love sweet mangos, I also enjoy firm, tart mangos to accompany my savoury dishes. A few years ago I tried a mango salad at a restaurant. Ever since then, I have been hooked on using mangos in salads!
The trick is to buy mangos that are firm and not completely ripe. As we say goodbye to summer, we also say goodbye to the fragrant, sweet mangos. Most grocery stores will carry mangos that are firm and tangy year-round.

After I devoured my Pumpkin Chocolate Chip Cookies last week, I was looking for another way to use up my pumpkin puree. There are so many possibilities but I decided to try my hand at Pumpkin Pie Granola. The result was a fragrant and delicious granola that reminded me of Pumpkin Pie. A few weeks ago, I shared a picture of persimmon on Instagram and told my followers that I never tried persimmon before. I got a lot of comments telling me I was missing out and had to try it ASAP! I headed to the grocery store as soon as I could (read: when my fridge was empty), and picked up some persimmons. Boy, was I in for a delicious surprise!
