Apricot and Almond Bars
the base
2 cups desiccated coconut
1 cup dry roasted almonds
4 tablespoons almond butter
4 tablespoons honey
2 tablespoons coconut oil, liquid
2 tablespoons apricot fruit spread
1/2 cup dried apricots, chopped
1 teaspoon vanilla extract
pinch of salt

4 tablespoons coconut oil, liquid
2 tablespoons maple syrup
Line a 20cm tin with baking paper over-hanging the sides.
Place the base ingredients into your processor and blend until the mixture is

Choc Coconut Slice
the slice
2 cups desiccated coconut
4 tablespoons almond butter
4 tablespoons cacao or cocoa powder
3 tablespoons honey
2 tablespoons coconut cream
1 teaspoon vanilla extract
pinch of salt
the icing
3 tablespoons cacao or cocoa powder
2 tablespoons coconut oil, liquid
1 tablespoon maple syrup
2 tablespoons desiccated coconut
Line a loaf tin with baking paper over-hanging the sides. Mine measures
19.5cm x 9.5cm.
Place the slice ingredients into your processor and blend until the mixture

Not Quite A Yoghurt Topped Choc Chip Muesli Bar

Two Minute Healthy Chocolate Pudding
1 ripe banana, peeled and mashed
1 tablespoon cacao or cocoa
1 tablespoon peanut butter
1 teaspoon honey*
Place the ingredients into a bowl and mix to combine. Microwave for 90 seconds. Allow too cool slightly.
Eat and enjoy.
*you can use rice malt syrup if you prefer.

School Lunchbox Anzac Biscuits
1 cup oats
1 cup desiccated coconut
2 tablespoons hulled tahini
3 tablespoons honey
3 medjool dates
1 teaspoon vanilla extract
Pinch of salt
Preheat your oven to 180°C or 350°F. Line a tray with baking paper.
Place the ingredients into your food processor and blend until the mixture is well combined and sticking together. Use your hands to press and shape the mixture into balls. Place the balls onto your prepared tray and gently flatten.
Bake the Anzas for 12 – 14 minutes or until golden. Remove from the oven and leave to cool on the tray for 5 – 10 minutes b ..read more

Four Ingredient Chocolate Rice Bubble Slice
1 cup peanut butter
1/2 cup honey
50g dark chocolate, melted
4 cups rice bubbles / puffed rice
Place the peanut butter, honey and chocolate into a large bowl and mix to combine. Add the rice bubbles and mix to combine. Spoon the mixture into your prepared tin and press firmly down. Place in the fridge to set.
Eat and enjoy.
