Sucker for a Kebab
If I was told I could only eat one type of food ever, it would be kebabs or skewers. For the time and effort you need to put into preparing and cooking them, you get a disproportionate amount of flavour (in a good way). So when searching for recipes to cook over the F1 weekend in Azerbaijan and coming across these Lyulya Kebabs, I knew early on what I was going to be cooking.
These Lyulya Kebabs are made from minced lamb and remind me of a Kofta. They are really easy to prepare and like most kebabs are packed with loads of flavour.

Savoury Chickpea Pancake
The Formula 1 Grand Prix moved to Monaco this week and for the F1 cook, I decided to cook Socca, a Chickpea Pancake.
Socca is quite prevalent in this region of the Mediterranean, and you may found it called different names such as Farinata in Italy. It is traditionally cooked on a wood-fired oven on a round copper plate.
It is a simple recipe, with very few ingredients. The majority of the recipes I looked at recommended equal parts of flour and water, with a little added salt.

Tapas with Spanish Tortilla
For another F1 cook as part of the Spanish F1 Grand Prix weekend, we decided to do some Tapas. The majority was bought (from Basco Fine Foods) but I decided to make a Spanish Tortilla, fully cooked on the BBQ.
Preparation and Cook
Overall, this was a relatively straightforward cook. It uses relatively few ingredients and is really a case of getting the temperature right in your BBQ.
I typically set my cooks up for 2 zone cooking. For this cook, I was using the SNS Kettle with the Slow ‘n’ Sear, which really helps with this type of cook where you are looking to ..read more

How Have I Not Had This Before!
One of the great things about doing these F1 cooks is discovering new foods and recipes. I came across a cut of meat I have never heard of before; Secreto Iberico. Oh, my word!
The Secreto is a piece of meat hidden behind the shoulder and below the back fat of the Ibericus Pigs. This is where it gets its name of the so-called “Secret” cut, or Secreto, as called in Spain. When reading about this cut, I knew it had to be one of the Spanish cooks.
I decided to buy the Arturo Sánchez Secreto Ibérico de Bellota from Basco Fine Foods. It’s not the cheapest cut but it ..read more

Simple but Great Tasting!
One thing I have really missed through the pandemic is holidays abroad. Whilst I love getting away from it all, relaxing on a beach or by the pool, I really love trying the local food. However, Glenn (aka Just a bit of BBQ on Twitter) commented recently that we don’t need to be on holiday to eat some great produce, which is so true!
One food that I rarely eat in the UK is Octopus, which is one of those treats I would class as ‘holiday food’. I have cooked Octopus from scratch before. It’s a fairly long process where you boil the Octopus to tenderise it and then ..read more

Introduction
Mark has written a couple of fantastic reviews for the website now. Last year he did a great review of the SNS Grills Kettle BBQ, which was one of the contributing factors that inspired me to go out and buy one recently.
This latest one is a review of the SNS Grills Kamado.
A Growing SNS Collection
I took delivery of my SNS Grills Kamado from Totally BBQ around 4 months ago and have used it excessively since. It has quickly become my go-to grill, it has really exceeded my expectations. This seems to be a similar trend when people get their first kamados.
It is no secret that I am ..read more

Piri Piri Chicken – Obvious I Know!
As part of my F1 cooks where I am doing a cook from each country where the F1 race is held, I went for Piri-Piri Chicken for Portugal. I know this is quite an obvious one, but a few reasons I chose it. Firstly, I really like Piri Piri Chicken, so it was a great excuse to have it again. Secondly, I have never made it with the sauce from scratch, which I really enjoyed doing. Finally, it is a great dish to cook over coals on the BBQ.
At its most basic Piri Piri Chicken is grilled chicken that has been marinated in a spicy chilli sauce. Some of the recipes I ca ..read more

Portugal – It had to be Sardines!
A little predictable I know, but as one of the Formula 1 cooks, as the championship moves to Portugal, I had to cook Sardines. I love Sardines at the best of times, so didn’t really need an excuse to cook these again.
I have cooked Sardines on the BBQ a few times. Typically I will just season with some Olive Oil and a little salt. This recipe adds a slightly different flavour to the Sardines and one that will become the norm for me.
Preparation and Cook
I bought these Sardines from AO Seafoods. They came filleted, which I wasn’t concerned about either wa ..read more

The F1 Circus Moves to Portugal
The third Formula 1 weekend of 2021-22 sees the championship move to Portugal. I have a few cooks planned this week that I am really looking forward to but I started with Febras assadas (Portuguese barbecued pork). This is a really quick and simple cook.
I didn’t have this cooked planned for this week and stumbled on this dish last weekend whilst doing some research. It looked pretty simple to do and as I had planned a Pork Tenderloin cook for this week I thought it would be a good midweek dish to try.

What’s Cooking on Race Day!
The second Formula 1 weekend of 2021-22 sees the championship move to Italy. Sunday is always race-day and for the cook today I did a smoked Ossobuco dish, served with Risotto alla Milanese (Risotto with Parmesan & Saffron).
What I love about doing these cooks is first, they take some research. I really enjoy that as I learn about different recipes and cuisines from around the world. Even when cooking from a country like Italy, where I think you know the cuisine well, it is apparent that I don’t. This then leads on to the second factor that makes these cooks so ..read more
