This healthy banana nut cake, with its deliciously rich chocolate frosting, is a decadent and indulgent dessert made with wholesome ingredients and perfect for those who are on a gluten free. dairy free or grain free diet. I topped this healthy banana nut cake with shaved dark chocolate, shredded coconut and hazelnuts, but you are welcome to use your favorite nuts or fresh diced fruit as well. The recipe for these gluten free Italian Dunking Cookies was made specifically for… well, dunking. Let’s be honest, cookies are good plain, but they get even better when they have soaked up the creamy deliciousness of (plant based) milk and they melt in your mouth! Italians have really mastered the art of creating the perfect dunking cookies, since – as you might know – dipping cookies in milk, tea or caffelatte is the most popular type of breakfast people eat when they are home. Because you I know I am all about recreating healthier, allergy free versions of the most beloved Italian dishes ..read more

Healthy Cherry & Chocolate Chip Ice Cream (GF, DF, V, *AIP)

I shot the recipe for this healthy cherry chocolate chip ice cream at the end of last spring in my Italian kitchen. As I was scrolling through the photos (which I shot for a collaboration with Vitamix and Coconut Bowls) I felt a big sense of nostalgia. I have been gone from Italy for so long now that just seeing my kitchen counter, the hazelnuts from Piedmont scattered on my table, and the produce haul from my trusted organic farm made me tear up. While I have been pretty much traveling full time for the last ten years and I am used to being gone from Italy (and from my family) for long s ..read more

Healthy Dark Chocolate Granola (Gluten & Dairy Free)
Little Bites of Beauty

Here’s why I came up with my own recipe for a healthy dark chocolate granola. There is a brand of granola I used to buy online that was absolutely addicting… I loved it. But even if it had very clean ingredients, it was still too sweet and I kept complaining thinking how much better of a product it would have been if only it had less sugar. One day, I finally got tired of “wishing” it was better and I took action making my own version of it! ? This granola is, of course, dairy and gluten free, vegan and rich in nutrients from the many types of seeds it’s filled with. Seeds contain hi ..read more

10 Strategies to Avoid Gluten in Restaurants
Little Bites of Beauty

I have been wanting to write a guide on how to avoid gluten in restaurants for a very long time. And I feel like this has been on your wishlist too as some of the questions I get asked the most are: “What can I eat at a restaurant that is gluten free?“, “Can celiacs eat in restaurants?” and then “Ambra, can you write an eating out gluten free guide to help us navigate restaurant menus while staying away from gluten?‘ I get it. For the gluten free diner, eating out and letting a stranger be in charge of their meals can become a dreadful (and sickening) experience. After 6 years spent travelin ..read more

Thanksgiving is coming and I have a simple, tasty idea for you! Grain Free Seafood Pasta (GF, DF, AIP)

Here’s how I came up with the recipe for this grain free Seafood Pasta. One of my favorite dishes in Italy is “Pasta alla Pescatora”, a delicious spaghetti dish seasoned with different types of seafood simmered in tomato sauce. Unfortunately, I get to enjoy this recipe very rarely, as I tend to avoid nightshades and it’s quite hard to find restaurants that make it without tomatoes. Also, sometimes I prefer to sub regular gluten free pasta with veggie noodles that add fibers and nutrients to the dish. So… like it happens most of the times when I really crave a dish, I make it myslef a ..read more

This roasted Kabocha squash soup is the creamiest, most delicious soup you’ll ever try. I promise! In my family, we’ve been making this soup with a type of “zucca mantovana” called Delica (the Italian equivalent of Kabocha) ever since I was little, and can’t think of anything more appropriate than this soup for a cozy Fall night. “Zucca mantovana”, which in English would read like “Mantua Pumpkin” is a round variety with a flattened top and bottom, a dark green / greyish color, and a sweet and compact bright orange pulp, that grows in the area around Mantova and is often considered to be ..read more
