As with all traditions, every ingredient that makes up our Apple Pie has a rich story with lots of historical twists and turns. Chef Becky’s take on apple pie is no different—from the crust to the apples, she pays homage to tradition while making the recipe her own.
Believe it or not, apple pie wasn’t always made with a crust. As far back as 1514, the Dutch were making it with a sugarless outer-pastry called a “coffin”—an inedible container with a rather unattractive name. Early American apple pies made by European colonists sometimes lacked a crust altogether! The art of crust-making is jus ..read more

Many employees look forward to the end of the year, to the festive spirit in the office, to holiday parties and Secret Santa gag gifts. And while holiday celebrations for the office bring good cheer, nothing beats personalized gifts that recognize employees as individuals.
Thoughtful gifts boost workplace morale and remind us that we are valued and appreciated. Of course, the question becomes, “What are the best gifts for my employees?”

Our 280-acre organic farm generates a lot of fruit. We sell our fruit to our e-commerce, CSA, Farmers Market and retail customers. Fruit that is too ripe or cosmetically challenged for fresh eating is dried, used in our pastry, or made into conserves. Fruit that is too damaged to be used in the kitchen isn’t wasted! Instead, we put it to work in our vast compost windrows. We generate at least 3,000 tons of compost each year.

For many people, apricots in the market are the sign that stone fruit season is officially open. Little did we know here in the United States that the true harbinger of stone fruit season is the green almond. Yes, you heard correctly – almonds, which are not actually nuts, are the first stone fruit we harvest. And leave it to Chef Mario to demystify this seasonal treat and add it to our tables.
So, what is a green almond?
A green almond is the fuzzy green fruit that has a very short, two-week window in April-May. Bite into one and you’ll experience a jelly-like interior that is the fruit in it ..read more

At Frog Hollow Farm, the arrival of spring means one thing: an abundance of fruit growing throughout our orchards.
Our prime season begins with flowering and fragrant trees, which are a precursor of all the delights to come. This picturesque sight sets the stage for our calendar of spring fruits, starting with mulberries and progressing through our beloved stone fruits.
Over these months, you'll spot our cherries, red, shiny and plump, and apricots with their golden hues flecked with pink. These eventually give way to peaches: incredibly sweet and eat-over-the-sink juicy.

We still have gray days, but when the sun peeks through the clouds and the flowers show their colors, we can almost taste an early variety Kettleman apricot. Spring is nearly here, and that means Farmer Al is in the orchard surveying the blooms, looking for signs from Mother Nature.
Confusing weather
We can’t look at the trees without looking at the sky too. The weather has us a little confused lately, Farmer Al says. We had some warm weather in late January and early February, and the sunshine pushed the Kettleman apricots and Santa Rosa plums into full bloom two weeks ahead of schedu ..read more
