Cottage cheese has been resurrected from its boring stereotype of a dated dairy snack plunked in a bowl with fresh fruit. Today its thee cool kid in the market since 1 cup of low-fat cottage cheese has a whopping 25 grams of protein. The mighty curds also features vitamin A and potassium. If you’ve recently hopped on to any social platform, chances are your feed delivered you a recipe or two featuring the 70s dairy fave in anything from lasagna to ice cream. I’m always searching for new ways to add protein to our breakfast rotation, so I put together this Whipped Strawberry Basil Cottage Chee ..read more

In Spring, I always find myself in a breakfast slump. Once the clocks jump ahead an hour and the weather is warmer, I find myself looking to abandon my hearty winter staples like a big bowl of hot oatmeal and craving lighter and brighter dishes. A new season always means a menu update and if you go to bed dreaming of breakfast like myself, then the first meal you update is also thee first meal of the day. Injecting fresh herbs into an easy breakfast is a great way to lighten your morning meal. By adding creme fraiche to eggs, you avoid a dry, rubbery texture and always yield a creamy decadent ..read more

Slow Cooker Easter Candy
Sweet Potato Chronicles

I don’t ever really make candy. But when I saw a version of this recipe using a slow cooker to make chocolate cluster with nut, pretzels and dried fruit I couldn’t resist testing my own clusters to create cute white chocolate mounds for Easter. I’m not the biggest fan of white chocolate either but when you pair it with vanilla cookies, peanuts and chocolate candies it turns into a bomb of deliciousness. It’s also shocking how easy it is to put these together using your slow cooker. I never imagined using my slow cooker for anything other than hearty meals but it worked like a champ. Carrot Cake with Coconut Cream Cheese Frosting
Sweet Potato Chronicles

This carrot cake is moist and delicious but what I love most about it is that it is made in a sheet pan. Baking in a sheet pan means a quicker bake time. While it may not have the same presentation of a layered cake, the convenience definitely outweighs the presentation, especially if you’re entertaining and have a lot on the go. And, quite frankly, I’m not mad at this cakes presentation in the pan: the expansive plane of creamy frosting looks inviting and delicious to me. I can’t help but think about Spring. It feels thisclose so I’m already dreaming up dinners that are easy so we can take advantage of the fact that the weather is more mild and the days are longer. After all, if you think about it, Spring meals are inherently shorter to prepare too. Once we pack up the dishes that traditionally benefit from long, flavour building cook times like chilis and stews, we can look to dishes that lean on pantry staples and local fresh ingredients. A great example of this kind of dish is this Dutch Baby. Using pantry basics like ap flour, eggs and milk, you can create ..read more

Soup skeptics who think they can’t make a meal out of a soup haven’t yet met the cheeseburger soup. This soup eats like a meal and has all the flavours of a well-constructed burger including bacon, cheese, pickles and sesame seed bun croutons. With cubed potatoes cooked right into the soup, I even thought of your French fries. OK, they’re not fried but they’re potatoes and that creamy soup base makes them pretty damn awesome. Sorry fries. Lasagna Soup
Sweet Potato Chronicles

A comfort food is described as a nostalgic dish that has sentimental value to a person. As comfort dishes go, lasagna fits the bill for me in spades. However, the long simmer of a homemade sauce and then an assembly station at my parents’ kitchen table is not something I can replicate during the week for my own family. Using elements of my dad’s method for sauce, I created this easy soup that gives you the comfort of a lasagna on a hectic weekday. I can hear my dad lovingly laughing as he says, “lasagna can’t be a soup.” Print Lasagna Soup There is nothing more comforting that a homemade la ..read more
