When it has to be something special, and smaller, then one of my favourite go-to’s is a cupcake. Especially when they come with my favourite flavour combination chocolate & pink chai. Perfect for holiday baking, a super easy and quick cookie dough. The recipe is vegan, gluten-free, sweetened with fruits and oil-free. The dough is wonderfully versatile and can be used for a variety of different cookies. The dough is very similar to a classic shortbread dough and is easy to form and roll out. Do you have too many leopard bananas? They are perfect for vegan and gluten-free baking. Because they don’t only help to sweeten but also create a lovely, fluffy texture They are the perfect ingredients for these Banana Donuts with raspberry glazing. Perfect for apple season! This apple cake only uses a few ingredients and is easy to make. The cake is not only vegan and gluten-free, but also oil-free and mostly fruit-sweetened. For sweetening I use my own homemade stewed apple. I simply peel, remove the core and chop them into smaller chunks. Then I place them in a pot with a lid and bring them gently to the boil. Schupfnudeln (fried potato dumplings) are a classic dish in the southern parts of Germany. This is my vegan and gluten-free version of this delicious meal. The original recipe for Schupfnudeln contains egg. This is easily replaced with psyllium husk fiber to make the dish vegan as well as gluten-free. The main ingredients are potatoes. Here at the other end of the world it is getting colder and the days are the shortest.
