Loaf cakes basically interpret as lazy cakes to me! I’m totally serious. They take minutes to whip up, there’s only one tin, minimal washing up and generally, they don’t need any decoration aside from a suitably tangy flavoured drizzle on top. If there was ever a perfect Spring cake, it’s this three-layer Orange Cake, drizzled with syrup and filled and covered with creamy buttercream. It’s taken a long time to perfect my gluten free baking and I’m pretty proud that it’s now just as I want it to be…moist, non-crumbly, rises well and has no ‘grittiness’ like some gluten-free bakes can have.
