These heart-shaped brownies are easy to make and are topped with cheesecake batter and a simple raspberry sauce, but you can use store-bought if preferred. The result is super fudgy! You can make them with all-purpose, whole wheat or gluten-free flour. The brownie base is my Gluten-free Brownies recipe, BUT! you can use all-purpose flour or whole wheat flour if you don’t need them to be gluten-free. Whole wheat flour is what was used in the photos. And they definitely don’t come out cardboardy or tasting whole grain. Each version is just as delicious as the other! I know because I’ve made ever ..read more

This espresso macchiato is for those who appreciate the bold intensity of espresso tempered by a delicate layer of milk foam. This easy-to-prepare beverage has two simple ingredients and delivers a revitalizing boost whenever you need it. It’s also easy to make vegan. Italians don’t have cappuccino after 11 am — it has to do with digestion and dairy, but they’ll have a macchiato, which is an espresso shot with a dollop of milk foam. It’s typically served in an espresso cup and has the same punch as any espresso drink. If you can’t have dairy, you can use plant-based milk. I’ll explain below th ..read more

This vintage heart cake has a flavorful lemon or vanilla fluffy cake base and pink naturally-colored frosting for a perfect Valentine’s Day dessert. You don’t need a specialty pan as it’s super easy to create the heart shape using two 8″ pans using only 2 simple, straight cuts. You can also make it with all-purpose or gluten-free flour. Cake base This recipe is an adaptation of the amazing King Arthur Flour birthday cake recipe I used in my Snowman Cupcakes and Christmas Tree Cake. I’ve made a few tweaks, like using less sugar and adding a bit of extra flavor with lemon extract and zest. You ..read more

Protein Chocolate Chip Cookies

These protein chocolate chip cookies are perfectly chewy with a crisp exterior and taste just as delicious as regular chocolate chip cookies. They use a mix of almond and coconut flour and are grain-free, dairy-free and can also be made vegan, keto and paleo. I think these cookies are even more delicious than my Perfect Paleo Chocolate Chip Cookies, from which these protein cookies are adapted. When I first baked them, it smelled like my memory of what a Popeye’s smells like (that memory is now about 20 years old, so not very reliable). ? One time, I thought it smelled like a donut shop I reca ..read more

This chocolate mousse pie has a totally homemade Oreo-like cookie crust that’s made in just a few minutes. It can be made with all-purpose, whole wheat or gluten-free flour. The mousse is also very easy and only requires 4 basic ingredients. Here’s a really easy last-minute treat for Christmas. I’ll admit that it’s not super Christmasy. Add some peppermint extract to the chocolate mixture and bam! There’s your Christmas pie. ;) Or smash up some candy canes, and throw them on top. Then it’s also festive looking! And if you need a last-minute Christmas present, these Chocolate Covered Pecans, C ..read more

Cranberry Almond Cake

This cranberry almond cake is wonderfully moist, has a lovely slightly dense texture, and is topped off with a simple almond glaze. It’s surprisingly easy to make and can be made traditionally, gluten-free or dairy-free. A few years ago, I posted this Whole Orange Cake with loads of orange flavor with cranberries for added tartness. It’s an easy cake, but more time-consuming than a regular cake because you have to boil an orange. Today’s recipe is much easier! And I think the cranberry almond combination is even better than cranberry orange. If you’re with me on that, you might want to check ..read more
