Simnel cake is a moist and super fruity cake, similar to that of Christmas cake but a lot lighter. It is topped with a layer of marzipan and 11 marzipan balls which represent Jesus’s apostles, some recipes also have a layer of marzipan baked into the middle of the sponge. Simnel cake was originally eaten on mothers day, although now it is more traditionally eaten at easter, when fatty and sugary foods can be consumed after lent.
