Hello! How are you? Keeping well I hope?
It amazes me but also makes my heart swell that despite nearly three years of quiet around these parts, over 300 of you still visit this blog every single day. Well... hello! Not quite sure how else to open after a cool 21 months away. Life got busy and the world went crazy and, well, here we are. I miss writing here and hope to reinvigorate this special space one day. Until then, I wanted to stop by quickly as I have some very exciting news which I'm dying to share with you!

Another day in lockdown, another day digging through the archives of my first blog, which I briefly wrote during my last year at university and first few months living in London.
Like flicking through old photo albums or hearing your voice played back to you, it's been an equally toe-curlingly cringeworthy and fondly nostalgic occupation. Turns of phrase and baking trends that have not aged well stand in for the bad haircuts and questionable clothing choices - I like to think I won't read this post back in seven years time with such disdain, but who knows. Hello! How are you doing? You ok-ish? The world feels like it's turned upside down, doesn't it? I'm a week into working from home, and just a couple of days into lockdown here in London. I'd like to say I'm getting used to it, but it does all still feel like a bit of a bad dream.
I'm trying to establish some semblance of a routine, to differentiate the different stages of the day if nothing else. I'm starting my day with a gentle Vinyasa, finishing it with a run round Southwark park and for those 15 or so hours in between... well, I'm working on it. These days, weekends are busy for me. My cake business - Lucy Burton Cakes - is getting busier and busier, and while I am loving all I'm doing, it does tend to occupy most of my weekends and evenings. Increasingly, I find myself missing those leisurely weekend mornings of old, where the only thing to trouble over was who was getting coffee and who was cooking brunch.

One of the things I love about baking in the winter is the plethora of tropical fruits that come to market. In late summer and early autumn we have a heady abundance of local fruits to chose from, but by mid-November, the gluts have finished and we must look further afield for brightness in the kitchen. Imported from Asian and the Middle East, passion fruits rich, almost yolky fruit offers a pukka-worthy tang of the acidic alongside its signature tropicana flavour. British summertime is officially over, it's coat weather and my lips are constantly chapped. Hello November and, more to the point, hello pudding season!
Predictably, I love this time of year. Comfort and contentment become the order of the day, and that's what lies at the heart of this recipe. Bread and butter pudding is such a classic, and can be amazing and disgusting with equal aplomb. I've had it both ways, and I've come to the conclusion that using an enriched bread such as panettone as the base of the pudding makes for a better texture.
