I work for a cider brewery and have been tasked with coming up with a business idea that will get the next generation interested in cider. I have two options for a business idea, it would really help me out if some 18-30year olds could help me choose one.
The first idea is a collaboration with a crisp manufacturer to make a unique crisp flavour that compliments our Cider.
The second option is a collaboration with a canned cocktail company to make ready to drink cider cocktails.

Currently reading about late harvest styled wines and how using shriveled grapes helps concentrate the flavors and can't help but wonder what the outcome would be for making a cider in a similar fashion. If you were to make cider using partially dried fruit would the resulting cider be too tannic/acidic or would it be something more akin to wine where it would have to sit in bottle/age for a longer period of time to become drinkable? Has anyone tried making this?

Ive tried looking online for a poster that depicts Cider, or Heirloom apples with their name, and ive only found one result that is severely overpriced. Anyone had better luck? I recently got into brewing, and would like to decorate my space with something informative.

What is the best wood to age cider on? Oak, Chestnut, apple? Has anyone tried aging a sharp apple on wood to make it more of a bittersharp with the added tannins? This may make it closer to vintage quality.

I stabilized my 3gal fermenter with campden tabs once my cider got bone dry. I added 2 cans of apple juice concentrate to sweeten.
It tastes good, but for the life of me I cannot add cinnamon and vanilla!
Once I stabilized, I added 2 sticks of cinnamon and some vanilla. A week later, I can’t taste either of them at all.
So, I decided to just dump my entire 2oz bottle of vanilla and the other 10 sticks of cinnamon straight into the fermenter.
A few days later… still nothing!!!! I’d really like to get my cider to just taste like a Big Red, but I guess God is stopping me.
