I’ve been on a bit of a hiatus from blogging, and even a little bit from social media. Family life was busy during the fall, as was my food styling business, and the truth is, if I had any extra time to share this just wasn’t my priority. I’ve always heard people talk about the fact that you really only need one, maybe two summer squash plants. But as I am a go big or go home type of girl, and the fact that this is our second year of gardening, I planted extra. So needless to say, I am in deep with summer squash. I hope you are having a lovely weekend. The boys went camping up near Mt. Adams this weekend, while Lola and I had a bit of a girls weekend. Played some softball at the field, visited the farmers market where I got to see my good friend and farmer Andrea, had some bbq for my second visit in a row, and did a little river swimming. The combination of chicken and rice is one of my absolute favorite comfort food combinations. Whether in a soup form, or as the main dish, I absolutely love it, and so does my family (luckily). I have even shared quite a few chicken and rice soup recipes over the years. Like this favorite soup. Years ago I attended a dinner event in Portland at a candy maker’s workshop. Happy weekend! We still have quite a bit of snow at our house, but we were able to get out and about this week, as the kids are heading back to school 2 days a week, and sports are starting to pick back up. I’m so excited to share with you this wildly easy, yet perfect little recipe. And, as always, it starts with a great dipping sauce (which is really the secret to encouraging my kids to eat more vegetables). This one is creamy, tangy, and even a bit healthy. You simply mix together some whole fat plain greek yogurt, a little sour cream, some tahini and turmeric. Season with salt and pepper, and put on everything. Sharing with you today a very easy, back-pocket style meal that my family and I lean on quite a lot when it feels like we need to go grocery shopping and are short on time. The great thing about back-pocket meals is their adaptability. You can make this vegetarian and leave out the meat, or swap it to ground chicken or even pork. Chickpeas can become white beans.
