Imagine the sweet flavor of ripe mangoes blended into a creamy, dreamy scoop of ice cream – mango ice cream is a refreshing summer treat. The first time I remember seeing a mango was when my older sister shared one with me as a teenager. Here was this giant fruit with a soft green and yellow leathery skin. She peeled the outer layer back and sliced off a wedge.  It was incredible. She has always had a knack for picking them when they are perfectly ripe. Juicy and sweet, with tender yellow flesh that was tinged slightly orange. Mango Ice Cream You can use fresh mango or frozen to make th ..read more

There aren’t many things that top a cold glass of lemonade on a hot summer day, but this strawberry lemonade is one of them. And if you’re like me and prefer your drinks a bit less sweet, homemade is the way to go. You can control the sweetness, and if it’s a lazy summer night, no one is going to judge you for adding a splash of vodka to your glass. Spiked strawberry lemonade? That’s a happy recipe for porch-sitting with friends and family on a Friday night. I love mixing drinks, both with and without alcohol, in the summertime. There’s something extra refreshing about holding a homemade soda ..read more

Good luck resisting snickers ice cream: peanut butter ice cream swirled with luscious caramel sauce, and bursting with pieces of snickers bars. Sometimes you just need to indulge yourself! Candy Bar Ice Cream There are many ice cream manufacturers who make some version of Snickers ice cream, but there’s nothing in the grocery store freezers that equals the deliciousness of homemade! Don’t be intimidated by the idea of making it either, it’s beyond simple! And if you are chuffed by your success with the Snickers ice cream, you should definitely try out this Twix ice cream that’s bursting with c ..read more

Welcome to the weekend, my friends! Our little village pulls out all the stops for the 4th of July with a street fair set up downtown for most of the week. It’s always a lot of fun, and we usually have friends or family visiting too, but when it’s over we’re all ready to get back to regular life. I’m looking forward to a week filled with everyday routines, walks outside, and plenty of sunshine! (Fun fact – I caught a glimpse of the haying that was happening in the field behind our house this week. I had NO idea that hay bales were so big! I walked out to the field and was in awe of the size ..read more

Chocolate Chip Macadamia Nut Cookies

Soft, chewy and just barely crisp on the edges chocolate chip macadamia nut cookies are memorably good. This is one of my favorite cookie combinations. There is no bad time of day (or even year!) for cookies. And these cookies? You’re going to want them all day (and year) long. Chocolate Chip Cookies with Nuts Most folks have robust opinions about whether chocolate chip cookies are better with or without nuts. We’re pretty firmly in the “yes, please!” camp. Putting nuts in cookies makes them more substantial as a snack. Now they’re not quite health food even with nuts, but they do fill you up ..read more
