1 cup Pad Thai Sauce
4 cups cooked wild rice
2 medium carrots, peeled and diced
1 cup shelled cooked edamame
½ cup toasted sunflower seeds
1 cup walnuts, chopped
1 jicama, peeled and diced
½ cup dried cranberries
½ tsp. freshly ground black pepper
Instructions
In a large mixing bowl, toss all ingredients together and serve. Wild rice salad can be made in advance and chilled before serving.

2 ¼ cups rolled oats
2 ripe bananas
1 large egg
1 cup milk of your choice
1 tablespoon honey or pure maple syrup
1 ½ teaspoon Baking Powder
1 teaspoon Cinnamon
1 teaspoon Vanilla extract
¼ teaspoon Sea salt
Instructions
Pre-heat skillet. Add all ingredients to a blender and mix. Cook on hot skillet with oil of your choice. Serve with pure maple syrup. Yields 24 pancakes

Grandma's Cornflake Cookies

1/2 lb Butter
1 C Sugar
1 1/4 C Flour
1 tsp Vanilla
1 tsp Cream of Tartar
1 tsp Baking Soda
2 C Cornflakes
Instructions
Heat oven to 350 degrees.
Cream the butter and the sugar together in large bowl, stir in the vanilla. Sift together flour, baking soda and cream of tartar. Slowly add dry mix to the butter mixture.
Take the 2 Cups of cornflakes and gently smash in Ziploc bag.
Add the cornflakes last and mix well. Make small 1/2” balls and smash down with fork. Add holiday sprinkles for festive touch.

4 oz cream cheese
4 oz goat cheese*
zest of 1 lemon
bacon
walnuts
honey
crackers or toast points
Instructions
Put equal parts cream cheese and goat cheese into food processor with the zest of 1 lemon. Combine until you have a smooth consistency, scraping down the sides periodically.
Put mixture into a piping bag and pipe onto a cracker or toasted bread. Sprinkle with bacon, walnuts and honey.
