Restrictive diets make shopping during the current pandemic even more difficult and require planning. My family tries to shop as little as possible, hopefully reducing our risk of exposure. This has required me to rethink both what I eat and how I purchase things like fresh veggies and fruits. I am not a baker. I just never gravitated to that type of cooking and so I have never developed recipes that fall into that category. I love to eat baked goods however and early on I learned to do some gluten free baking. If you've ever visited this site on January 1st you know that I don't do New Year's Resolutions, instead I do April Fool's Day Resolutions. I just like it that way because I like the spring better than the winter. Winter is a season I just try and make the best of, it's not a time of year when I need a challenge. I haven't posted any recipes since August, I have been away so to speak. I have been on a dietary adventure that has challenged my recipe making skills and my shopping skills and worst of all my ability to adapt. I have gone dairy free. In the past I have avoided lactose but avoiding dairy all together has been a vastly different struggle especially in cooking. A Quick Way to Always Have Lemons & Limes On Hand

I never know when I'll need some fresh lemon or lime juice and I always seem to be out of them right when I need one or find they've gone bad in the frig. The solution? Freeze the whole fruits and always have them just a short defrost away. I just learned you can freeze both lemons and limes and I can't wait to try it. This means if my market has a great sale on a bag of limes I can go ahead and purchase them knowing I can freeze what I don't immediately use.
