It’s that time of year again; Shrove Tuesday, hot on the heels of Valentine’s Day and the Lunar New Year. Of course, what we all need is more celebratory food. Filled with copious amounts of cream, ideally. Well, Swedish cream buns – or semlor – are here to cater to your sweet-toothed whims.
This recipe is a non-traditional vegan (with a refined sugar-free option) take on the classic, beloved Swedish semlor, the national pre-Lent treat of choice. So if you’re looking for a delicious alternative to Shrove Tuesday pancakes, or simply a yummy home-baked indulgence, try these semlor!

The most luscious, moist vegan chocolate layer cake made for my daughter’s almost-Valentine’s Day birthday (back in 2019). And then again for my baby boy’s birthday three weeks later. And again for my big boy’s birthday a week after that.
Yes, you get the picture. My children’s birthdays are very close.
And we are a little obsessed with this recipe!
There’s no eggs, milk or dairy butter in this delightful party-perfect treat, but I pinky promise you will not miss anything. It’s that good.

Creamy, crunchy-topped and savoury, with hints of festive sweetness and herbs, this delicious Potato, Fennel & Apple Gratin is surprisingly vegan and can be made gluten-free. You didn’t know you needed this comforting deliciousness, packed with all the comfort… until now!
Before I take you to the recipe, my thoughts on the coming year (which officially began here around 40 minutes ago!) are centred around the things I can change or improve myself. A bit of a Serenity Prayer moment, I suppose. For those who do not know it (you do not have to be religious to find some solace/inspiration in i ..read more

This cake-meets-pudding is a deliciously fruity, subtly sweet take on a Swedish classic known as ostkaka (literally ‘cheesecake’). Baked cheesecake is definitely known to be a comforting treat, but it does not have to be heavy or incredibly rich. And Swedish style cheesecakes are not ordinarily baked with fruit, nor is the classic version of ostkaka vegan, as you might imagine. But this non-traditional, fruit-bejewelled spin (which also happens to be light on added sweetener) is a delightful alternative.
Happy comfort baking!
Stay cosy and well, friends!

Big on flavour, light on effort! Gorgeous gravy, mushrooms, asparagus and creamy delikatess potatoes (or small potatoes of choice), are all cooked together in this tempting dish that’s ready to eat straight from the pan, if you like. This is low-fuss (no veggie peeling necessary!) veggie comfort food deluxe.
If you’re not quite convinced yet, keep in mind that cooking the gravy with the vegetables enhances the flavours of both.
So, grab a skillet pan and the ingredients listed below, and give this delicious meal a try.

By popular request, and in time for Halloween 2020, I bring you the English language version of a whimsical, tasty recipe that falls on the wholesome side of the Halloween treat spectrum.
I created these happy little jack-o’-lantern sandwiches for a project I worked on with one of my clients, Friggs. This is not a sponsored post, but as I have had many requests for the recipe in both English and Swedish, here is the former for those of you who have been awaiting it! For the Swedish version, please visit this post at friggs.se .
If you do not celebrate Halloween, I can heartily recommend the hu ..read more

Challenging times meet colder, darkening days. Simple, comforting delicious food to the (semi) rescue! This recipe is so simple that I hesitate to call it one, but in case there’s someone else out there wanting to make use of tomatoes in a cosy, utterly delicious and time-saving manner, here’s a way that we like to do them!

Inspired by Italian stromboli, this surprisingly simple vegan stuffed pizza is a meal and a treat in one. Served hot with warm tomato sauce or even cold as a snack or lunchbox meal, it’s plant-based comfort food that’s convenient, easy, impressive and, most importantly, tasty.
This stuffed pizza is packed with flavour, but uses non-traditional ingredients, such as roasted red peppers, vegan cheese and vegan deli slices. Use store bought pizza dough to save on time, or one of my pizza dough recipes if you prefer. And if you are not able to get a hold of TVP (textured vegetable protein) sl ..read more
