I’m working on a TDF patio/pool-friendly cocktail to share with you soon and all I can think about when…thinking about it…is how perfectly it would pair with a plate of sizzling grilled chicken, serving bowl of Sesame Noodle Salad, and enormous slice of gluten free angel food cake with tons of cold whipped cream and berries.
Add in a warm evening plus a good book and I think I just came up with the perfect Mother’s Day plan!?
Big dreams aside, I can’t wait for you to try this cold sesame noodle salad that’s dressed with an intensely flavored sesame dressing with the perfect balance of salty ..read more

This past spring break the fam and I packed up our car then drove 17 hours south to Gulf Shores, AL.
#WOOF
But so worth it – we’d never been and were so impressed with the area! Powdery white sand beaches, turquoise-hued water filled with dolphins, and as much local seafood as we could handle. I’ll spare you the Forrest Gump line, but we made it our mission to try every which way the Gulf Shores were serving up fresh shrimp, and…mission accomplished. I think my blood was 25% clarified butter by the end of our vacation!
It was with our trip in mind that I went the healthy route and whipped up ..read more

When breakfast looks and tastes like dessert, is make-ahead, and has nearly 30 grams of protein to boot — it goes from a meal that’s easy for me to skip (guilty!) to one that I can’t wait to eat.
I probably shouldn’t be this excited to share the recipe for High Protein Overnight Oats, but each bite tastes like a treat you’d enjoy on the patio of a quaint little bakery.
The best part? It’s made with everyday ingredients and requires ZERO protein powder!

The main thing you need to know about Mini Egg Bites is that the other day I told my middle child that I had a special, after-school snack for him and he asked:
“IS IT EGG BITES?!”
It wasn’t, sadly, but that’s how good these wee, poppable, protein-packed little egg bites are! They’re perfect to bake then eat warm, but also terrific for meal prep since they reheat deliciously. Plus like I said – they’re great for kids, and kids at heart.

The holidays are steeped in tradition for my family. Whether it’s Christmas, Easter, or Thanksgiving we always kick things off with a scoop of hot and hearty Crockpot Breakfast Casserole, plus a pan of Gluten Free Cinnamon Rolls and bottomless mimosas.
Heck we even schedule our family’s birthday celebrations around brunch time so we can serve this easy crock pot breakfast casserole as the main event. It is a CINCH to assemble, feeds an army, and is dearly loved by all.
I mean just look at those crispy, cheesy bits! #drool

Like many families, Friday night is pizza night at our house. But maybe unlike other families, our pizza order is a bit…complicated.
I need a gluten-free crust on account of my Celiac Disease, Gwen needs a vegan crust and vegan cheese because she’s allergic to eggs and dairy, while the boys are happiest with regular crust and cheese.
That said, what’s supposed to be a fun and easy dinner to look forward at the end of a busy week, can sometimes feel like more trouble than it’s worth. (Ok, that’s a lie – I’d go to the ends of the earth for pizza!)
Needless to say, the recipe for Gluten Free Piz ..read more

Like many families, we LOVE taco night at our house — however, my kids are still in the more-filling-lands-on-the-floor-than-in-their-mouth stage of eating tacos.
Pro tip: sweep the floor the day after dinner when the ground beef and rice have hardened and are easy to clean up. Follow me for random parenting advice.
Anyway, problem solved with Cheesy Taco Soup which dishes up all the irresistible flavor of a loaded beef taco in a cheesy, hearty, totally satisfying soup format!

I have something slightly controversial to say but I’m just going to say it: I dislike — nay, loathe — chunky beef stew.
The aversion is a result of being served a few too many pot roasts with dry meat and soggy vegetables as a kid (sorry Mom!) Unfortunately beef stew became guilty by association and was lumped into the “hard pass” recipe category for many years.
Thrilled to say we’ve got a work around and that the ingredients in my Stove Top Beef Stew are not only easily scooped up with a spoon (keep your knives, pot roast!) but melt in your mouth tender. This version of beef stew is really ..read more

Last month a few friends and I headed out for dinner and drinks followed by a comedy show featuring the one and only Trey Kennedy. He was SO funny! I didn’t know if a sketch comedy-style guy would translate into a good stand up comedian, but he nailed it. You also have to appreciate when a PG-themed comedian can get an entire audience rolling without uttering a single swear word.
This is a talent I do not possess.
Anyway, 10/10 + two thumbs up + highly recommend!
