Super simple and oh-so-satisfying, this buttermilk ranch seasoning mix can be used to make dip, dressing or to season meat and vegetables! This is a dry mix made using buttermilk powder which you can find online or occasionally in baking sections of your grocery store. You can easily customize the rest of the herbs and spices to suit your taste. Love the punch of garlic? Add an extra teaspoon of garlic!  Love a little smoky flavor? Try substituting a smoked salt or even a fancy truffle salt for a unique mix that is truly all your own. Once all of the ingredients are tossed together, stor ..read more

Condensed Cream of Mushroom Soup {Dairy Free}

Between the shutdowns making me feel less than motivated and having the kids home nearly full time since March, I’ve had less time and energy which results in not posting a recipe in WAY too long. On the upside, being home more often has had me cooking comfort foods lately in the form of Minnesota hotdishes (casseroles for the rest of you) and cold weather combos. Cream of mushroom soup is one of those that I use quite often for recipes and many of these comfort foods would typically use a condensed canned soup.  However, I haven’t purchased a condensed cream of mushroom soup in a can in ..read more

Homemade taco seasoning is one of the hand blended spice mixes that I always have stocked for simple easy meals. With no crazy additives like MSG or anti-caking agents that are commonly found in packaged mixes, you can be sure you’re keeping your diet clean. The seasonings can easily be altered to your taste and catered to your own preference by adding more or less of each spice. I make this multi-purpose homemade taco seasoning in bulk and keep it in a mason jar in my spice cupboard. This makes it super easy to just toss into taco meats, fajitas, quesadillas, dips, eggs, skillet meals and it ..read more

Chipotle Stuffed Peppers

Comfort foods have been in high demand at our house and these chipotle stuffed peppers have absolutely been in rotation a few times this past month. I’ve been exhausted balancing the kids school work with trying to maintain running our consulting business. Add in that we’re cooking more meals than usual with the kids home for lunches now full time due to distance learning so easy foods are a necessity. I must say though that this really has been a beneficial time to regroup and collect our thoughts on what’s truly important in our lives. Part of this learning has been to recognize which piece ..read more

Chili Verde

Finally, I’m willing to admit that my garden is done for the season. I’ve harvested all it had to offer and preserved much of it for future meals. One of the vegetables that my garden provided in abundance this year was tomatillos. These plants seem to sprout EVERYWHERE so I just let them do their thing and was rewarded tenfold. Of course, I then had to come up with ways to use them. Salsa verde is a big one for me as I make it to sell at the local artisan market so I accomplished that task first. Wanting to do something different (and to stock my own shelves with home-canned soup for the win ..read more

Oh my goodness! I think summer has FINALLY arrived in Minnesota! Not that we every stopped grilling, even under multiple feet of snow but summer grilling is much easier than shoveling out the grill first. Ha! Combining jalapenos and lime give this coleslaw a spicy tang that’s sure to please your palate. Jalapeno coleslaw is super simple to make which means it’s a great dish to take to potlucks or serve at your next ..read more

Salisbury Steak and Mushroom Onion Gravy

Now, I know Salisbury steak is not a glamorous meal but it’s one of those meals that is super economical, family friendly and doesn’t take much time to make. I have fond memories of having this as a kid… except it had been incorporated into a frozen dinner rather than homemade. Even so, it’s comfort food at it’s finest. Made as a healthier homemade version, prepare these steaks with the traditional ground beef or make it a bit more wild by using ground deer for a delightful venison Salisbury steak option for my hunter friends. Before you relegate this dish to the wayside as a comparison to it ..read more
