Pretty pleased with myself! I really enjoyed the taste of meat so it was hard to give it up. I watched a documentary on factory farming when I was 14 and that permanently convinced me- I couldn't feign ignorance over where my food was coming from. I ultimately decided to commit to vegetarianism because I believe it is the moral approach to life, and to improve my health. Hi, I'm new here! My 7 (almost 8-year-old) has told me she would prefer to eat vegetarian for the last several months. I want to accommodate her preferences and have done so easily with adaptations for dinner and breakfast, but am struggling with easily packable vegetarian lunch options. I've signed up for a pot-luck taco bar. But due to the scheduling of everything, I don't think I can use my normal mushroom taco fillings. After searching around for a while, I can't seem to find very many slow-cooker mushroom taco recipes. Anyone have any good, recommended options? Or recommendations on how to prepare more 'traditional' mushroom taco recipes without being able to actively cook the food between morning and lunch?
