As we approach Christmas next week and begin to wrap up this monumental year of 2020, I am compelled to write a little bit about JOY. Okay, you can roll your eyes, but bare with me as I reflect. It’s important to eat high fat/ketogenic on the day before you fast. Doing so kickstarts the transition into ketosis which is the most important factor determining how you feel. It also seems to provide a good base for satiety during that sometimes challenging first day. Also make sure you replace vitamins and electrolytes because you’ll be depleting these over the next few days.

Happy Foodie Friday Friends!!
Last night we made one of my favorite go-to sides. Its super, super simple. Like you don’t even need a recipe, simple. However, I feel like I need to post this for those of you that have never tried a Grilled Caesar. It may sound strange – hot lettuce??? But just trust me and try it out. Hope you love it as much as we do!!
Needless to say this side pairs nicely with pretty much anything, but especially with Italian inspired dishes and our favorite combo – Ribeye and Grilled Caesar. yes please!

One of our favorite cooking vessels is the cast iron skillet. Cooking in the cast iron really takes a standard stuffed pepper or fillet of salmon to the next level (stay tuned for those recipes). Its no exception that this crispy cajun shrimp is a tasty and simple cast iron meal. I can make this recipe in 15 minutes flat on a weeknight if I’m in a pinch for time. These little swimmers taste great on salads, on top of cauliflower rice, or my personal favorite – taco style in a lettuce wrap (Shrimp Taco Tuesday – yum)!

When Fall arrives, there are a few cool weather comfort foods that I get excited to cook. My Primal Instant Pot Chili is on the list of course. Another favorite is Primal Bolognese Sauce. This meaty sauce is one that can easily be made in the instant pot for a quick sauce. But there is just something I love about making a sauce in our dutch oven and letting it simmer all day…. the smells wafting in the kitchen – yes please. This salsa is so yummy and takes only 5 minutes to make!
If you’ve never tried or heard of avocado salsa, it might sound a little odd to you. But trust me, if you love salsa and you love guacamole this gives you the best of both worlds. I like to use tomatillos because they add a perfect tangy flavor with the avocado, plus keep the salsa a beautiful shade of green. But if you have regular tomatoes on hand they will taste great too. We love to cook lamb in the Prendergast home. Lamb burgers, lamb sausages, lamb meatballs, lamb chops… Yum yum! I created this salad as the perfect primal side-dish to complement lamb with mediterranean flavors (without the grains). This salad goes great with a chicken breast or salmon fillet too! It always satisfies my craving for something cool, crisp and filling.

Happy Foodie Friday!!
Last week I shared my Bacon Broccoli Salad Recipe, and I mentioned that I love to serve it with with my air fryer chicken thighs. What I love about these chicken thighs is they always turn out delicious, they are easy to prep, and they are an inexpensive but healthy, primal meal. I always have a pack of chicken thighs in my freezer for a simple week night meal. Bonus – the kids are always pumped for “chicken on a bone.”
