So I am having some real with my Italian meringue. Fist i should say, I am fairly novice in baking macarons, but I have made italian meringue lots of times, never had any issues with standard italian meringue( ratio of egg white/ sirop is much higher) I should specify: I have baked macarons from french meringue until i was sure all my steps were done right; my macaronnage, the resting time, the oven temperature, those factors have been dealt with. I've made macarons for maybe 3 years but really struggle with getting full shells and keep getting hollows.. I use the magnolia kitchen recipe. I make them at my work. So I’ve decided I wanna try my hand at macarons. I’ve been looking into several recipes, mostly YouTube as I’m a visual learner, but I’m not sure what to go with for my first time. They all say different things. One says to use parchment and a baking sheet with walls. The next said to use a silicon mat with a flat tray. One says to refine your dry ingredients until they are all fine. Then next threw out all the big chunks. All their little tried and true techniques are so different. So for context the darker, smaller macaron was my first attempt and it tasted great, but was wrinkled and a little cracked. To fix this I tried to half the amount of cocoa and replaced it with almond flour/powdered sugar but then these spread… used the same temperature 300F for 17-18 mins, the second batch came out smooth but spread so what did I do wrong ?? ? Ive been making macarons for about a year now and ive never had a problem with macarons cracking until recently. It'll only be a few in the batch and not all of them will be cracked. I bake them in different batches and the second one I bake never has this problem. Ive tried resting the macarons for longer but I still get cracked shells in the first batch to go into the oven.
