In case you missed it, I’m starting a new series on my blog that is all based around the recipes I make for us at home. This is a meal that I cooked in the evening for the fam, photographed as quickly as possible, all so I could eat a hot meal with our daughter before it got cold. Not only does dinner need to be quick now that I have a newborn, but I also need recipe creations for the blog to be quick so I can actually get them made, filmed, photographed, and cleaned up all before Avery wakes up from her nap. Shrimp is something I often forget about. But in the summer, it’s the BEST! It doesn’t take long to cook so that means you don’t have to have your stovetop on for very long and it’s so refreshing compared to some of the heavier protein options out there. I recently started getting shrimp delivered to the house in my monthly meat order and I’m so glad I did. Now I make shrimp salads weekly because it’s so damn easy! So you know the beloved crab cakes? Why aren’t more fish-type cakes on the market? What about cod cakes? Or Mahi Mahi cakes? I have a theory…it’s probably because websites are all about SEO optimization and no one is searching for cod cakes. What ARE they searching for? Some gdamn cute crab cakes. When I was in New York a couple weeks ago, I ate at a cute little Australian restaurant called Ruby’s. This spot is known for its salads and bowls, so I obviously needed to go there…bowls are the only way I would prefer to live my life. But when I saw their pumpkin spinach salad on the menu, I decided it had to be mine. And this salad DID NOT disappoint. It was absolutely delicious. If you follow along on stories, you know I make A LOT of bowls. I make breakfast bowls, lunch bowls, and dinner bowls. And most of those bowls look pretty much the same – chicken, beans, veggies, and some sort of sauce or dip. Which is exactly what I had for breakfast this morning. I’ve been teaching myself to cook for over 10 years now and I’m still somehow intimidated by fish. Why does it feel so scary? It’s actually quite simple and quicker than most other meats, so it’s a real win-win. And today it’s all about salmon! We have salmon at our house at all time so I’m always looking for new ways to cook it up so it doesn’t just taste like the same salmon day after day. Remember when Rachel Ray had her 30 Minute Meals show on Food Network? I loved that show. That takes me back to my college days when I finally had cable television for the first time and Foot Network became my new obsession. I was pretty antisocial freshman and sophomore years of college, so I spent most of my time in my apartment watching Food Network and cooking absolutely nothing.
