If you’ve ever been to Austin, you know that Torchy’s Tacos is a staple. They have all kinds of incredible, crazy tacos that you go back for again and again. The best item on their menu to try to recreate, though? Torchy’s queso. If you hit up Torchy’s for the tacos, I HIGHLY recommend you make any taco you get “trashy.” Why? Because “trashy” tacos mean taking the lettuce off and smothering it in some of the Torchy’s queso deliciousness. There’s seriously nothing better than one of their creative tacos with queso on top. It’s spicy, but not too spicy, with amazing flavor from the roasted vegg ..read more

Buffalo Roasted Cauliflower Bites

The other day, I was looking for something different. After all, quarantine has meant a lot of experimenting with what we’ve got in the pantry, freezer, and fridge in order to cut down on grocery trips. I wanted something for lunch that wasn’t going to weigh me down the rest of the day, but that still had all the flavor and spice I was craving. Enter buffalo roasted cauliflower bites! Anyone who tells you these taste like chicken wings is not lying. Obviously it doesn’t taste like chicken (in my book, that’s a good thing… thanks a lot, eldest child’s pregnancy), but the heat of the sauce abso ..read more

10 is the Number: A Look Back at Our Infertility Journey

Almost 10 years and 10 babies into our journey to become parents, it’s a little bittersweet to think we’re done. We have seven babies in Heaven, being loved on by three of the sweetest grandparents anyone ever could have had, and three little boys here on Earth, creating chaos most of their waking hours. Because we’re practicing Catholics, we don’t believe in any permanent methods of birth control, nor do we believe in using the pill, IUD, etc., so while there’s a chance we could have more babies, we’ve made the decision for my heart and my health (and maybe our sanity) that we need to do our ..read more

How to Make Torchy’s Guacamole Recipe

We love Torchy’s in this house. We’ll hit them up after Mass for a yummy brunch or pick up tacos for an easy Taco Tuesday. They’ve dreamed up all kinds of combos in their tacos with something for everyone, but one of our favorite things is to just get a big tub of their famous Torchy’s guacamole and queso for a football Sunday. When I want guac, though, I’m not always game to drive the hour round-trip it would take in DFW (since we aren’t blessed enough to have them as plentifully as we did in Austin). As a result, I’ve come up with my own Torchy’s guacamole recipe that’ll knock your socks of ..read more

As of last night, Baby #3 is eating solids! I can’t believe we’ve already hit this milestone, but I’m also super excited about it. This is the third child we’ll have done Baby Led Weaning with and likely the third child to be about as un-picky as they come. Our kids eat everything from spicy Indian and Tex-Mex to every vegetable under the sun. We both truly believe it’s because of Baby Led Weaning. Allowing them to choose what they eat and how much has given them the confidence to know that we aren’t going to force foods in them and made them more likely to try new foods. Not only has Baby Le ..read more

Breathe Essential Oil Blend Uses and Benefits

Breathe Essential Oil Blend is probably our most-used blend in this house. Comprised of Laurel Leaf, Peppermint, Melaleuca, Cardamom, Lemon, Eucalyptus, and Ravensara, it helps maintain feelings of clear breathing and open airways. My kiddos have it diffusing in their room at night, mixed with some Lavender essential oil, to help them sleep more soundly because more air means they sleep more deeply (which also means more sleep for Mama)! It also helps to minimize the effects of seasonal threats (and in Texas, there are MANY), no matter what time of year seems to make you the most miserable. O ..read more
