Around here, we love BLTs. And even better, BLTAs, “bacon”, lettuce, tomato, and avocado. I often make my vegan bacon from tempeh but for this recipe, I used coconut bacon, addicting as it is. I love that the lettuce cups replace the bread, too. This recipe requires a couple of things to be made in advance but once you have everything done, it comes together in minutes. Over 20 years ago, I took a road trip from Minnesota to California. I had never been west of Colorado with it’s beautiful pines, and fluffy snow. When my girls were little, one of our favorite summer desserts was a cake that involved angel food cake, strawberries, strawberry jello, and whipping cream. Oh, and lots of sugar. I love summer food. It’s easy, fresh, delicious and bursting with flavors that you only get when produce is in season. First, I want to apologize for not posting for so long. We have been going through some healthy issues in my family and it has taken up a bit of time. I am very happy to be back posting!
