So it’s been a while since I first made these Tuna Quinoa Cakes. Somehow I ended up with a backed up ‘drafts’ section in my queue, and it’s finally their turn to shine! My original intention for the cakes was to add crab to my zucchini cakes recipe. But crab and panko didn’t make the grocery cut that week. Ok, sooooo…I’m gonna be 100% real with y’all. I don’t think anyone has ever eaten a cucumber with a cheese ball. At least, no one did with this one. This being a healthy living blog and all, I guess I felt like I needed a veggie prop with this appetizer. Under normal circumstances, I always serve veggies with dips. So this made sense at first. Remember when I bragged about Kyle going all Chef Boy-ar-Ehle? Well, he did it again. And it was really, really tasty. Roasted red pepper hummus always used to be a crucial item on the grocery list. In an attempt to eat more green foods, I tried some experiments. Experiment 1: Creamy Green Veggie Pasta Sauce. Success! Experiment 2: Out of asparagus, sub in avocado. With all of the awesome weather we’ve been having, it’s been making me want summer. Not necessarily the blazing Texas heat that everyone wants when it’s 50 degrees and windy in February, which we then complain about by mid-July. Sometimes, meal plans are best designed around the sales you find at the grocery store! This week I picked up some lean thin cut beef for stir fry that had to be used by Tuesday. Easy way to plan a meal, don’t you think? Stir fry is also one of the easier dinners to incorporate lean proteins and lots of veggies! I also incorporated some healthy fats into the beef and veggie mix by tossing in cashews. In my house, stir fry is usually served on a bed of brown rice.
