Looking for a bbq place that has the peanut based "goober" sauce. My perusing online indicates it started in and was most prominent near Richmond, VA, but I can't find any restaraunts claiming to serve it

My daughters high school graduation is coming up and we've been talking about some food ideas. I mentioned pulled pork, she said yeah that sounds good. I will have about 75 people there maybe 100. How many lbs would I need? Also is the cook time the same for 4 butt roast as it is for one. From what I've read rule of thumb is about 1hr of smoking per lb !

I use Weber charcoal chimneys but over time, the wire grate on the bottom always warps and falls out. Any recommendations on a better, sturdier chimney brand? Or a DIY way to reinforce my webers?
Edit: I work in a restaurant where we fire up a lot of coal. To light it, we put the chimney on an outdoor propane stove so it gets hit directly by gas flame for 30 minutes at a time. I feel like something with a solid construction would fare better.
