Things have been a bit full on recently with me opening the new UK BBQ School site early in the summer. But it was lovely to take a moment recently to sit down with a warming bourbon and chat with the team at Big K Charcoal .
I’ve been working with the team at Big K for a while now, and loving their charcoal to cook with both at home and UK BBQ School it probably comes as no surprise that my current favourite charcoal is the Big K Applewood. It’s been so popular it’s been in huge demand.
It was nice to be able to share some of my recent experiences and update on where things are for me now an ..read more

How to make a BBQ dry rub
I often get asked how to make a simple BBQ rub, in the video below I show you how I work with ratios of ingredients which can be scaled up easily, this is a solid all purpose bbq rub for chicken, pork, vegetables and even seafood. You probably already have these ingredients already at home.
You don’t need to use much, I often see people using too much rub which then overpowers to food. There are some great commercial bbq rubs available, but it’s very simple to make your own spice rub for BBQ cooking.
Here I use equal amounts of salt, pepper and sugar, with a little ga ..read more

Kimchi Burger
Burgers are awesome, and come in a wonderful variety of types. I’m also a big fan of kimchi, so wanted to pair the two up to make an epic kimchi burger, and went for kale as a bit of green instead of lettuce.
I cooked the burger on the Black Box BBQ Ascua parilla grill over cherry wood to add to the flavour, getting a nice sea, and cooking to medium, then cooked the kale in a pan over the direct heat of the logs in a little coconut oil for a few minutes.
I loaded the kale, then the burger followed by a pile of tasty Vadasz Deli kimchi into a toasted seeded brioche bun. It was a ..read more

Epic Smash Burgers
Cooking Smash Burgers on the griddle is one of my favourite ways to cook a cheeseburger, you get a nice crispy crust and because they are cooked so quickly you get a lovely juicy burger still.
I love them so much, I had my own custom smash burger press made, (it cooks awesome tortillas too) you simply place a ball of your mince, chuck twice ground on medium, chuck a little coarse sea salt and black pepper on top, and then smash away with the press.
The press needs to be good and hot, and i’m lucky my press has a top plate that sears on top, it takes literally seconds, you th ..read more

Using a digital thermometer such as a Meater + to cook chicken on the bbq makes it much less of a worry. Many people do worry about cooking chicken on the BBQ, not knowing when it’s ready, and cook indoors to the time on the pack, massively overcooking it. Are the juices running clear? It’s not easy..
However using a Meater to cook a chicken on the BBQ makes it easy, with great results of a juicy smoky chicken that’s perfectly cooked and safe for you to eat. Set up your BBQ to cook indirect with the lid on, and set up for 180-200c, the cook will take 40 to 60 minutes, but most important of al ..read more

Nandos BBQ Chicken recipe
Nandos BBQ chicken is loved by many people, but have you thought about cooking it at home on the BBQ? Here I show you how to make nandos chicken.
It really is easy, and the results can be superb. You could make your own spices and peri peri sauce if you like, but I really like the nandos sauces and rubs you can get in the supermarket to make an authentic nandos chicken recipe, everyone loves peri peri chicken, I wanted to cook up something that had a bit of bbq theatre as well.
So I spatchcocked a free range chicken and dusted with the Nandos lemon and herb dry rub. I ..read more

The Masterbuilt Gravity 560 Smoker has been an awesome grill so far taking everything I have cooked on it without missing a beat, but I wanted to see what I could fit in it, ie. how much capacity there was for cooking for a lot of people.
So I set about an epic cook to feed an army to put it through it’s paces. I wanted some thing low and slow, brisket, beef short ribs, baby back ribs, and a few things to ramp up the heat for, smoked ham, boudin negra and Argentine chorizo sausages.
The Masterbuilt grill held temperature perfectly at 140c for around 7 hours for the brisket and short ribs, I ..read more

A DIY Fire Pit Grill is a great way to cook, it really is back to basics cooking, a fire pit is a great addition, but by adding a large grill grate on top you turn it into a DIY fire pit grill combo, now you have lots more options, you can cook your meal, and then sit around after in the warmth of a wood fire, and do things like toast marshmallows.
Building our was simply a matter of pulling together some large rocks from a recent building project, into a ring, filling the inside with some smaller stones. You’ll need some even flat stones for the top ring. I will be creating a flat hearth wi ..read more

Masterbuilt Gravity Smoker Brisket
This was my first Masterbuilt Gravity Smoker brisket, however I have smoked a fair few before. I only have a small piece of brisket that I wanted to do a test cook on, I will be running a full packer brisket on the Masterbuilt 560 grill shortly, but this was good enough to see how well a longer cook would go on the grill.
I also popped on a rack of short ribs to keep the brisket company (wouldn’t want it getting lonely now). I was very impressed with the temperature holding of the grill, I set it to around 140c, and it help temperature steady as you like. I l ..read more
